Ginger and Soy Salmon Fillets with Broccoli

Ingredients

  1. 2 cups small broccoli florets
  2. 2 tablespoons vegetable oil
  3. Kosher salt and freshly ground black pepper
  4. 1 tablespoon soy sauce
  5. 1 teaspoon light brown sugar
  6. 1 teaspoon rice vinegar
  7. 1/4 teaspoon cornstarch
  8. One 1/2-inch piece ginger, peeled and grated
  9. 2 skin-on salmon fillets (6 ounces each)
  10. 1 scallion, thinly sliced
  11. Cooked white rice, for serving

Instructions

  1. Toss the broccoli with 1 tablespoon of the oil in a bowl until coated. Season with salt and pepper. Transfer the broccoli to a 3.5-quart air fryer.
  2. Stir together the soy sauce, sugar, vinegar, cornstarch and ginger in a small bowl. Brush the salmon fillets on all sides with the remaining 1 tablespoon oil, then with the sauce. Arrange the salmon flesh-side down on top of the broccoli.
  3. Cook at 375 degrees F until the broccoli is tender and the salmon is cooked through, 10 to 12 minutes for medium to well done, depending on the thickness of your fillets. Transfer to serving plates, sprinkle with the scallion slices and serve with rice.

Didn’t seem to be anything spectacular. The salmon was tender as it always is in the air fryer. Barely tasted the sauce (which possibly was due to the salmon being flesh-side down). Unfortunately all of the broccoli that wasn’t directly under the salmon burned; I only cooked at 370 since my air fryer temps only go in increments of 10. I was interested in attempting a different cooking method putting the salmon and the broccoli together but honestly, microwaving broccoli in a bag and cooking the salmon separately in the air fryer is less work, has better flavor and yields the same cleanup in my opinion.

So easy and so delicious! The salmon cooked to the perfect tenderness, but required a few extra minutes. The flavors are so simple yet complex. I steamed the broccoli separately. Then tossed it with olive oil and some Asian spice.

My husband really enjoyed how crispy the salmon turned out.  Also looked very appetizing and was.  Next time I think I will marinade the salmon in the sauce for a while before cooking so there will be more depth of flavor but will definitely make again.  Very good.

Delicious! The salmon comes out so juicy and the skin crispy and perfect. And broccoli in the air fryer? Dare I say that it might just be better than roasted. Definitely putting this into my recipe go-to files.

Unlike the rest of the reviews, I actually made this recipe. The salmon was delicious. I cooked it for about 10 minutes and it was medium. I stopped cooking because the broccoli was starting to burn. If I wasn’t trying to make everything in one pot I would have just steamed the broccoli instead. But I’ll definitely make the salmon in the air fryer again.
