Gina’s Spicy Corn Chowder

Ingredients

  1. 4 pieces thick-sliced bacon, chopped
  2. 1 medium Vidalia onion, finely chopped
  3. 1 medium red bell pepper, chopped
  4. Salt and freshly ground black pepper
  5. 1 small jalapeno, chopped seeds and ribs removed
  6. 3 cloves garlic, finely chopped
  7. 1/4 cup all-purpose flour
  8. 4 cups chicken stock
  9. 2 large red potatoes, well scrubbed and small diced
  10. 1 cup heavy cream
  11. 16 ounces frozen corn
  12. 1/4 teaspoon cayenne pepper
  13. 1 bay leaf

Instructions

  1. In a small saucepan over medium heat, saute the bacon until crisp and browned and the fat is rendered. With a slotted spoon, transfer bacon to paper towel and reserve. There should be about 4 tablespoons of bacon grease in pan.
  2. Add the onions and red pepper to pan. Saute until tender and translucent, about 4 minutes. Season with salt and pepper, to taste. Add the jalapeno and garlic and saute until fragrant, about 1 minute. Stir in the flour until thoroughly combined. Cook the flour until it reaches a slight blonde color, about 1 minute. Stir in the chicken stock and the potatoes and simmer for 10 minutes; potatoes will become soft. Add the cream, corn, cayenne and bay leaf. Simmer for 15 more minutes. Pour into a serving bowl and garnish with the reserved bacon.

I love this recipe as a blueprint for making it my own – the first few times I made it, I followed the recipe as is adding cooked ground chicken at the end. The most recent time I made it I substituted ground sausage for the bacon (I forgot to buy it), kept the jalapeno seeds in, added crushed ground pepper in addition to the cayenne and used 2% milk instead of cream and it’s delicious! Not sure why I’m on a soup kick in this Dominican heat, but my husband says it’s better than any of the food we’ve eaten since moving to the DR 7 months ago lol.

Very good base recipe but I did a little twist since didn’t have bacon or red pepper. Instead of the bacon I used andouille sausage and cut in chucks – cooked in pan with oil to get flavor. Removed it and diced for later. I used red onion, poblano pepper, green pepper and jalapeño pepper as peppers. I used cayenne and cumin and black pepper as spices. Plus a little salt. I used red potatoes and chicken stock as recipe called for (sort of like cooking a potato soup) – I then added 1 can evaporated milk and some regular milk along with the heavy cream (creamier). I used fresh sweet corn too that I freeze each year off the cob. I added back in the chorizo when added the cream base and stirred in some shredded Colby cheese just a little to cut the spice. I use recipes as base only and use what I have in my kitchen. I don’t measure either which usually works! I base on taste not measurements. This base recipe was great and glad tried my variation for a spicy andouille potato corn chowder! I bet delicious as written too!
