Garlicky Sauteed Swiss Chard

Ingredients

  1. 2 tablespoons olive oil
  2. 2 cloves garlic, smashed
  3. 1 teaspoon red pepper flakes
  4. 1 large bunch Swiss chard, ribs removed and chopped, leaves roughly chopped
  5. Kosher salt
  6. Splash red wine vinegar

Instructions

  1. Add the oil to a large saute pan with the garlic and red pepper flakes. Cook over medium heat until the garlic turns golden. Remove the garlic and discard. Add the chopped Swiss chard ribs and saute until soft, about 4 minutes. Add the Swiss chard leaves and season with salt, to taste. Cook until the leaves are wilted. Stir in a splash of red wine vinegar. Serve immediately.

Super easy and very delicious. I had to tone the chili flakes down a little to keep the kids in the game. 1/2 teaspoon was more than enough for two bunches of chard.

This Swiss chard was delicious and a huge hit! One of my crew prefers to avoid eating red pepper flakes so I used half a poblano pepper instead. I also added a yellow bell pepper and opted not to discard the garlic.

I had already sautéed a bit of onion before I found this recipe so besides that and substituting tarragon wine vinegar (it’s all I had) I followed the recipe. We really enjoyed these slightly bitter, spicy greens!
