Garlicky Polenta

Ingredients

  1. 2 tablespoons unsalted butter
  2. 6 cloves garlic, grated or minced
  3. 4 cups chicken broth
  4. 1 cup instant polenta
  5. 1 cup grated Parmesan
  6. 1/2 cup heavy cream
  7. 1/4 cup chopped fresh chives
  8. 1/2 teaspoon freshly ground black pepper
  9. Kosher salt

Instructions

  1. Heat the butter in a medium saucepan over medium-low heat until melted, then add the garlic and cook, stirring frequently, until fragrant and lightly golden, about 1 minute. Add the chicken broth and increase the heat to medium-high. Bring to a boil, then turn the heat down to low and add the polenta, whisking. Cook, stirring regularly, until thick and creamy, about 10 minutes. Add the Parmesan, heavy cream, chives and pepper and stir to combine. Add salt to taste and serve immediately.

This was AMAZING! I think this might be my new favorite side dish and will be making this again and again. Already sent the recipe to my foodie daughter. After reading other reviews I used 4 garlic cloves and about 3/4 cup parmesan cheese. Other than that I did not change a thing. Delicious!

My husband usually does NOT like instant anything . He had to admit these were pretty darn good. I can’t think of any tweaking that would have made it better. Thanks Valerie for a great recipe

I have no words.  This was delicious!  My husband and I absolutely loved this with the chicken cacciatore.  I wish I had doubled the recipe so we had even more leftover than we do.  My daughter really liked it as well.  Even though we love garlic in our house, I listened to the reviews and added half the amount the recipe stated.  We will make this again and again.  So good!

It’s between a 3 and a 4 for me. While I enjoyed it, I found that even after sautéing garlic, it had too much of a “raw garlic” flavor. I would either dial it back or maybe roast some or all of the garlic.

Waaaaayy too garlicky for my tastes and I only used 4 cloves instead of the 6. 1 clove would be sufficient, then reduce the Parmesan to 1/2 cup. Could up the chives a bit too if you want a milder, but still awesome flavor.
