Garlic Parmesan Spaghetti

This spinach salad is unique and quite simple to create. Everyone I’ve made this for has praised it wildly!

Ingredients

  1. 6 ounces spaghetti
  2. 1 tablespoon butter
  3. 2 cloves garlic, minced
  4. ½ cup reserved pasta water
  5. ½ cup lightly packed freshly shredded Parmesan cheese
  6. 1 tablespoon finely chopped fresh parsley

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, 8 to 10 minutes.
  2. Meanwhile, melt butter in a skillet over medium-high heat. Add garlic and cook until fragrant, about 1 minute.
  3. Drain spaghetti, reserving 1/2 cup pasta water. Add pasta water and Parmesan cheese to the skillet with the garlic. Stir to combine. Add spaghetti and parsley. Toss to evenly distribute parsley amongst spaghetti and serve immediately.

This is a favorite dish in Roman homes and a classic. However I was disappointed with the recipe. Ingredients were perfect! Cooking technique not so much. Yes start with the butter and garlic, next toss the spaghetti and parsley with garlic. Then add the cheese and toss well again and serve. Following the recipe verbatim the cheese melted in the butter and garlic and clumped in the spaghetti with balls of cheese and parsley. Beware!

This was delicious! The only change I made was subbing the parsley with basil, and that’s because I have fresh basil on hand. AND….for over thinkers like me, you don’t have to keep cooking once the garlic and butter have cooked for the minute. I wasn’t sure and the recipe didn’t say either way. Just turn off the heat and add the rest.

I make this frequently as a side dish to go with meat, fish, or poultry. I do add some salt and pepper, and occasionally, chopped basil and oregano. Quick and tasty.
