Garlic Parmesan Orange Roughy

This tasty, easy recipe for gourmet orange roughy. Other mild white fish can also be used with the spread. For a quick weeknight supper, combine with couscous and your preferred veggie.

Ingredients

  1. 4 (4 ounce) fillets orange roughy
  2. ½ lemon
  3. ½ cup grated Parmesan cheese
  4. ¼ cup butter, softened
  5. ¼ cup prepared Dijon mustard mayonnaise blend
  6. 1 large clove garlic, pressed
  7. ¼ teaspoon salt
  8. ½ teaspoon paprika, or to taste

Instructions

  1. Preheat the oven’s broiler and set the oven rack about 6 inches from the heat source.
  2. Place fillets on the broiler pan and squeeze lemon over fillets.
  3. Broil in the preheated oven for 6 to 8 minutes.
  4. Combine Parmesan, butter, Dijionnaise, garlic, and salt in a small bowl. Spread Parmesan mixture on top of fillets. Sprinkle with paprika.
  5. Broil until topping is lightly browned and fish flakes easily with a fork, about 3 minutes.

It was AMAZING!!!!!!! I just happened to have an orange infused olive oil so I oiled the pan with that! I didn’t have mayo, but had miracle whip. Didn’t have Dijon but had mustard. The only additional ingredient that I added was dill weed. My husband was amazed by the flavors!!! Keeping this one!!!! Thank you!!

Easy & Delicious cheese mixture. I only had 3 fillets so there was too much of the cheese mixture, but I loaded it on and it had a fabulous flavor. Make sure you leave it in long enough to brown on the top.

Did not like it! To much garlic and butter in recipe. Recipe needs to be revamped. Using yogurt is more healthier, but was not good either. Making next time just adding lemon juice on top of really ant fish fish and put the paprika on top.

The mustard overpowered the fish. If I were to make it again I would skip that ingredient and I think it would be good.

Delicious! As others said, it makes more topping than you need so next time will make about a third less of the mixture. I used what I had on hand: shredded parm instead of grated, and I mixed mayo, brown and regular mustard together to taste instead of dijonaise. Followed cook times exactly and it was perfect.

This was a tasty fish! Based on other reviews, I tweaked the ingredients. I used no salt, 1/2 tbsp Dijon, 2 tbsp mayo and 2 tbsp butter for 3 filets. (I didn’t want to coat the tops with a whole lot). Cooked as stated and it was just right. Will definitely be making this again!
