Lamb is a traditional dish to serve in the spring. Ree serves her chops with simple classic flavors, such as garlic, lemon and rosemary, and adds red pepper flakes for a hint of spice.

Ingredients

  1. 2 teaspoons chopped fresh rosemary
  2. 2 teaspoons kosher salt
  3. 1 teaspoon freshly ground black pepper
  4. 1/2 teaspoon crushed red pepper flakes
  5. 3 cloves garlic, minced
  6. Zest of 1 lemon
  7. 2 racks lamb
  8. 2 tablespoons olive oil
  9. 2 tablespoons salted butter

Instructions

  1. Mix the rosemary, salt, pepper, red pepper flakes, garlic and lemon zest in a small bowl.
  2. Using a sharp knife, cut the racks of lamb into chops. Rub both sides of the chops with the seasoning mix.
  3. Add the olive oil and butter to a skillet over medium-high heat. Add the lamb, in batches if necessary, and cook for 2 to 3 minutes per side. Transfer to a platter and let rest for a few minutes before serving.
