Ingredients
- ¼ cup olive oil
- ¼ cup lime juice
- 1 tablespoon minced garlic
- salt and ground black pepper to taste
- 2 skinless, boneless chicken breast halves
Instructions
- Mix olive oil, lime juice, garlic, salt, and black pepper in a bowl or resealable bag; add chicken. Marinate in the refrigerator, 3 hours to overnight.
- Preheat oven to 400 degrees F (200 degrees C).
- Transfer chicken from marinade to a shallow baking pan. Discard remaining marinade. Season chicken breasts with salt and black pepper.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Very nicely juicy and tender chicken breast, especially when allowed to marinate overnight. I used additional garlic cloves based on prior reviews and avocado oil. It’s a nicely light flavor, in combination with the lime. I sliced it and made part of a salad.
A very simple recipe that is full of flavor. This is perfect for those who love to meal-prep, and produces tender and juicy chicken. For even cooking, I like to pound down the breasts to an even thickness. 25 minutes is perfect. I have also made this using lemon juice instead of lime and it is equally tasty. I marinated for 3 hours and that provided plenty of flavor.
Good simple recipe…only marinated about 30min add salt and pepper on chicken before marinating…was good and I will use it again as a base…yum Monday quick dinner

A simple but tasty recipe! I added more garlic than recipe suggested, chicken came out very moist and tender. A solid base for other chicken recipes.
I made this for my family last night. I’m a vegetarian so I can’t speak for myself, but my husband didn’t really care for it. It said it was fine but didn’t love it. Based on other reviews, I put in 1-1/2 the amount of garlic but otherwise left it unchanged. Will look for another recipe before trying this one again.

Baked in a glass baking pan with additional marinade poured over the chicken. Put it under the boiler for about 5 minutes to brown it. The extra marinade made a nice sauce for the chicken.
I have made this a number of times and loved it — except I used lemon juice in place of lime. it’s easy and I don’t need to measure exact the ingredients. thank you for the recipe — simple ones like this are useful for inexperienced cooks trying to not to dry out the chicken

Really really a good simple marinade. I butterflied my chicken and decided to grill mine because it was rather warm here today. The garlic and the lime both shined in this recipe and I’m the “garlic” lady but I did grate mine over a Microplane so maybe that made a difference not sure but this is one I would totally make again.
