Garden Spread Finger Sandwiches

Ingredients

  1. Three 8-ounce packages cream cheese, slightly softened
  2. 1/4 cup finely diced red onion
  3. 1 tablespoon chopped chives, or more to taste
  4. 1 tablespoon chopped fresh dill, or more to taste
  5. 6 green onions, sliced
  6. 1 large carrot, peeled and finely diced
  7. 1 stalk celery, finely diced
  8. 1 clove garlic
  9. 1/2 red bell pepper, finely diced
  10. 12 thin slices nutty wheat bread

Instructions

  1. Combine the cream cheese with the red onion, chives, dill, green onions, carrot, celery and garlic in the bowl of a food processor. Pulse until mixed together and the spread reaches the consistency you want.
  2. On 4 slices of bread, top one side of each with 2 tablespoons of the mixture. Top each with another slice of bread. Spread the tops of the second round of bread slices with 2 tablespoons more of the garden spread, then top with the remaining bread slices. Wrap the sandwiches and refrigerate for 1 hour.
  3. When ready to serve, cut off the crusts, then cut each sandwich into 3 even fingers or 4 triangles.

This tasted just like my favorite cheese spread, Allouette Spring Garden mix. I did the same preparation as Rouvi, a previous reviewer, and it came out perfectly. Only thing I did different was add some salt to the mix. I, too, prefer it on crackers rather than bread. But for a tea party, bread works just fine. Highly recommend!!!

The vegetable cream cheese spread is terrific! I made 1/3 of the recipe as I had only one 8 oz container of cream cheese I needed to use. I used 1t dried shallots (reconstituted) for the red onion, IT minced scallions, 1T minced carrot, 1T minced celery, 1 small clove garlic minced, 1t minced fresh dill, and added 1t minced fresh parsley and salt and pepper. I did not use a food processor which kept everything from muddling together and simply mixed all into the softened cream cheese. This is great for not only sandwiches, but as a spread for cut vegetables, crackers, pretzels, etc. SO much better than the processed vegetable cream cheese from the dairy aisle!
