Funnel Cake with Powdered Sugar

Ingredients

  1. 1 liter canola oil
  2. 3 cups all-purpose flour
  3. 1/4 cup sugar
  4. 2 teaspoons baking powder
  5. 1/2 teaspoon salt
  6. 3 eggs
  7. 2 cups milk
  8. 1/2 cup powdered sugar, for sprinkling

Instructions

  1. Heat canola oil in deep-fryer to 350 degrees F.
  2. Mix flour, sugar, baking powder, and salt. Whisk in eggs and milk. (Use 1/2 cup of batter for each funnel cake.) Pour 1/2 cup batter through funnel into hot oil, moving in a circular motion as you do so, to make each spiral-shaped funnel cake. Fry each spiral of batter until golden brown, about 2 or 3 minutes, remove with tongs and lay on paper toweling to absorb oil. Transfer to a plate and sprinkle powdered sugar through a sieve onto top of hot dough. Serve immediately.

I followed the recipe as written but added cinnamon and vanilla. The funnel cakes were really good but I would have liked the batter to be a little sweeter (but it was nothing a little extra powdered sugar couldn’t fix). I’ll half the recipe next time. It yielded about 8 large funnel cakes.

Fabulous recipe! I made them a bit smaller than the average sized funnels. The cake rises and fries beautifully, especially in my cast iron! Whatever you do, don’t try the recipe on another site using butter. Nasty!
