Ingredients
- 1 cup golden raisins
- 1 cup red raisins
- 1 small orange, rind finely chopped
- 1 cup brandy
- 2 sticks butter, softened
- 2 cups light brown sugar
- 3 eggs, at room temperature
- 4 cups all-purpose flour
- 1 teaspoon allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1 cup finely chopped dried pineapple
- 2 cup chopped raw pecans
Instructions
- Preheat oven to 250 degrees F.
- Combine raisins and orange rind in a microwaveable bowl and pour over the brandy. Microwave for 2 minutes then let it sit while you prepare the batter.
- With an electric mixer, cream the butter and sugar until light and fluffy. Beat in eggs 1 at a time.
- Whisk together the dry ingredients until homogenous, then fold in the dry ingredients.
- Strain the brandy from the raisins and reserve. Stir the raisins, pineapple, and pecans into the batter.
- Grease 2 (8 by 4-inch loaf pans and line the bottom with a piece of waxed paper. Spoon the batter into the pan. Bake 3 hours. Let cool and remove from pan. Poke holes with a large skewer all over the cake.
- Soak a large piece of cheese cloth in the reserved brandy. Wrap cooled cake in cheesecloth, place in large plastic bag and store in a cool, dry place.
- It is awesome served with vanilla ice cream.

I don’t even like fruitcake, but I loved this!!!
By far the best fruitcake I ever made. I saw this on TV and only used 3 cups flour, so I didn’t have anything to go wrong.
This recipe is so wrong compared to the way Dave prepared this on the show. The 4 cups of flour should be 3 as stated by other reviewers but also change the following: use 1/2 cup white sugar and 1 1/2 cups dark brown sugar instead of 2 cups light brown sugar; grate 1 tablespoon fresh Ginger over the raisins, orange zest, and brandy; use 2 teaspoons allspice- not 1 teaspoon; Dave used margarine, not butter. Lastly Dave said to bake at 275 degrees for 2- 2 1/2 hours not 3 hours at 250. I made this recipe per the episode directions not the website. Hope this helps others, and I wish food network would correct this recipe.

I had the same experience with my four cups of flour. I think the flavor was good without considering the denseness so I will give this another try in the future.
I made this recipe yesterday and realized something was very wrong, instead of a smooth batter I had a lumpy mess. Luckily I had recorded this epsiode and when I watched it again I realized the ingredients Dave used aren’t the ones in this recipe. What a disappointment!!
I rated this recipe a One because there is an error in the recipe. Use 3 cups of flour instead of four. I can’t wait to make this recipe again because even with the error it was surprisingly delicious. Too dense, but if I didn’t tell someone why they would never think anything of it. The recipe is the PERFECT blend of flavors but just too much flour! On TV he only used three cups but I didn’t pay attention and used the four cups in the on line recipe. Definitely try it, it’s delicious even if you make it wrong.
Please ignore my rating because I have not made this recipe, but I wanted to warn those of you who plan to try it. Dave used 3 (three) cups of flour on the program, and if you use four you will have a very thick batter as another poster mentioned.
I hope that people read reviews BEFORE trying this recipe. It is always a good idea. The proof is here. I just watched the episode and indeed Dave says 3 cups of flour NOT 4. I hope the “powers that be” who run this site change it soon on the recipe, before anymore ingredients get wasted. I haven’t made it, thats why I rated it 3 I just wanted to let people know about the misprint.
