Frozen Ginger Lemon Drops

Ingredients

  1. 1 cup ginger/lemon simple syrup, recipe follows
  2. 1 cup vodka
  3. 1 cup lemon juice
  4. 4 cups ice
  5. Lemon wedges, for garnish
  6. 1 cup water
  7. 1 cup sugar
  8. 1 (4-inch) chunk ginger
  9. 2 sprigs mint

Instructions

  1. Add simple syrup to a blender. Add remaining ingredients and blend until smooth. Pour into glasses and garnish with lemon.
  2. For the syrup:
  3. Bring water to a low simmer and stir until sugar dissolves.
  4. Add ginger and mint and allow to steep for 20 minutes. Strain and chill.

this is deligious and light and makes for a nice not too sweet cocktail. Unfortunately, my blender was not big enough for a full serving so it did not get slushy enough for me. It is still a BIG hit

This cocktail is so tasty and the perfect accompaniment to this meal. I only had a mango flavored vodka in my kitchen so I decided to use that instead of running to the store just to get a plain vodka. One sip of the drink and you’ll go “wow! this is really really good!” My husband and I enjoyed this refreshing cocktail very much!

I tried this an it was a hit at my gathering. I added a half a cup of GingerAle an I also tried it with Rum and Gin instead of Vodka an it was just as good.
