Frozen Chocolate Bananas

Ingredients

  1. 4 ounces bitter or semisweet chocolate, chopped
  2. 2 teaspoons vegetable oil
  3. 8 mini bananas, peeled
  4. 1/2 cup chopped toasted nuts
  5. 8 wooden frozen pop sticks

Instructions

  1. Set an empty egg carton, upside-down, on a baking sheet. Cut 8 small holes in the top of the rounds to hold the pop sticks.
  2. Put the chocolate into a microwave-safe bowl. Microwave the chocolate on HIGH, stirring occasionally, until melted, about 1 to 2 minutes, depending on the power of your microwave. Stir in the oil and cool slightly.
  3. Skewer the bananas with a frozen pop stick. Dip the bananas into the chocolate mixture, freeze until the chocolate sets slightly, about 2 minutes. Roll the chocolate bananas in the nuts, and freeze until firm, about 4 hours. Serve frozen.

I’d like to add a couple of tips to this recipe that I’ve learned from experience. First, it’s really important to let your bananas ripen until they are covered with *small* brown spots. That ensures that their sugar level is optimal. Next, when you freeze them, do not place them in a freezer bag. Moisture that evaporates from the bananas as they freeze will result in ice crystals on the bananas if it is trapped within a plastic bag. This ice will melt into the chocolate when you dip the bananas and cause the chocolate clump. If you do see ice crystals on the frozen bananas, brush it off prior to dipping them. This recipe is really great! We used to make these when I was a kid in the hot summer months as an afternoon snack!

We kicked ours up a notch…after we dipped in the chocolate we rolled them in Rice Krispies!!! Yummy!!

I thought this was very yummy, but next time I will definatly let the banana’s freeze overnight before I dip them in chocolate. I will be making this one again though.
