Frozen Berry Crumble

My Dad made these oven-roasted peanuts, and the recipe is quite simple. Just keep in mind to turn off the oven, remove them, and don’t even open the door for an hour.

Ingredients

  1. 6 cups mixed frozen berries
  2. 4 tablespoons white sugar
  3. 2 teaspoons cornstarch
  4. 1 ½ cups rolled oats
  5. 1 ½ cups packed brown sugar
  6. 1 cup all-purpose flour
  7. ¾ cup chopped pecans
  8. 1 teaspoon ground cinnamon
  9. 1 cup unsalted butter, cut into small pieces

Instructions

  1. Defrost frozen berries for 1 hour.
  2. Preheat the oven to 350 degrees F (175 degrees C). Grease the bottom of a 9×13-inch baking pan.
  3. Toss berries, white sugar, and cornstarch together in a large bowl; set aside.
  4. Combine oats, brown sugar, flour, pecans, and cinnamon in a separate large bowl. Cut in butter with a pastry blender or 2 knives until crumbly. Press 1/2 of the mixture over the bottom of the prepared pan.
  5. Bake in the preheated oven for 7 to 8 minutes. Cover with berry mixture. Sprinkle remaining crumble mixture over the berries. Continue to bake until fruit is bubbly and topping is golden brown, 30 to 40 minutes.

I made it for the fist time when we had company over and it was turned out perfectly!!! Served warm with some whipped cream. Tasted just like my grandma’s used to!!!!

Came out soupy will not ever be making it again 3 stars only because it smelled really really great and it was sweet and we use it more like a drizzle syrup with berries with ice cream but it didn’t come out as a crumble at all or whatever it was supposed to be.

I’ve been making this for 50 years, with a variety of toppings. Best in late winter, waiting , waiting, waiting for spring and summer fresh fruit-from local farmers. And our own garden. Warm with good vanilla ice cream!
