Ingredients
- Olive oil, for frying
- 1 3/4 cups freshly grated Parmesan
- 1 1/2 cups panko (Japanese breadcrumbs)
- 3/4 teaspoon salt
- 2 large eggs
- 3 medium zucchini, cut into 3-inch long by 1/2-inch wide strips
Instructions
- Pour enough oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 350 degrees F.
- Stir 1 1/2 cups Parmesan, the panko, and salt in a medium bowl to blend. Whisk the eggs in another medium bowl to blend. Working in batches, dip the zucchini in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the zucchini in the panko mixture, patting to adhere and coat completely. Place the zucchini strips on a baking sheet.
- When the oil is hot, working in batches, fry the zucchini sticks until they are golden brown, about 3 minutes. Using a slotted spoon, transfer the fried zucchini to paper towels and drain.
- Arrange the fried zucchini on a platter. Sprinkle with the remaining Parmesan and serve.

These were crispy delicious. A couple of things I did differently…I used 2 zucchinis and sprinkled them with about a tablespoon of salt and tossed them in a bowl (I didn’t use any salt in the panko mix). This helped to draw out the moisture. I used flour, of course, but added ½ tsp of baking powder to the flour. This added a fluffier coating when fried. Then I used an air fryer at 400 for 8 minutes. The coating turned out super crispy.
Delicious. Taste like real fries and good texture. I dipped mine in ranch and ketchup like normal fries.
Yes. Per most reviews on here, the breading did not stick. I will make these again but add the flour step so the breading will adhere to the zucchini.

I tried here because my kids haven’t liked the traditional slices as they’re too soggy. I added the extra flour step and added a little garlic bread flavoring to the flour, used an egg-milk mixture, and added some flour to the cheese/panko, and the breading stuck on well. It came out nice and crispy. I only used one zucchini and that made about 24 spears which was more than plenty. My kids and husband liked them with ranch and asked if I could make them again.
I tried it. Ultimate Fail. The breading mixture did not stick at all. After frying they are extremely soggy, not crispy at all. Yuck. Since the breading mixture did not stick, I fried it like fritters, was much better than the zucchini fries.
