Ingredients
- 6 sweet potatoes, peeled
- ½ cup butter, or more as needed
- 2 cups packed light brown sugar
Instructions
- Bring a large pot of water to a boil. Add sweet potatoes, and boil for about 4 minutes. Remove from water, and cut into 1/2-inch slices.
- Melt butter in a large frying pan over medium heat. Stir in brown sugar until dissolved, adding more butter if necessary. Add sweet potatoes, and fry until golden brown and fork tender, turning occasionally. Serve hot.

I enjoyed reading the reviews. I have to say my experience with making the fried sweet potatoes was quite different – and I take full responsibility. 🙂 I have had a great laugh at my outcome. I shouldn’t have used so much brown sugar, but used what was called for. I had a lava lake of sweet potatoes and caramel candy in the pan. The potatoes weren’t frying, they were drowning and getting sticky. I decided to pour out some of the “lava” and managed to spill spots of it everywhere. One spot on floor pulled my sock off completely. I called my son to come and look at it because he was expecting fried sweet potatoes. He looked at it and said, “Does it taste good though?” I said “Go ahead and try it.” He liked it because he likes sweets. When it was all said and done he said, “Well at least you know how to make peanut brittle now.” Please don’t misinterpret this as criticism. It was a crazy, funny cooking night and I’ll do better next time based on all of your reviews. And, seriously, I think the two cups of brown sugar was too much.
Recipe is easy to follow and I enjoyed the end result. The fries are delicious.

I only boiled the small 4 potatoes I had for about 10 minutes approximately, I didn’t measure butter or light brown sugar I had that prepared before the potatoes were done, I sliced them in circles and put them in pan and sprinkled more brown sugar I would say I used 3 tablespoons of butter maybe 4 and maybe 3/4 cup of brown sugar. I love sweet potatoes and will make this again!

I really enjoyed it, but I thought it turned out really sweet. Next time, I’ll probably half the sugar. It was almost like I was boiling the potatoes in a candy syrup.

I changed the prep for the sweet potatoes, as I cut them super thin using the thin setting on my mandolin. Then put the sweet potatoes on the butter raw. Turned out great with the edges of the potatoes being a bit crispy while the rest was soft and delicious.
The first time I made these, the potatoes were a little too mushy after boiling them. Now when I make them, I fry the potatoes instead of boiling.

This recipe turned out nice. I did it for 3 servings. I used 2 round sweet potatoes, 1/2 cup brown sugar and 4 tablespoons of unsalted butter. I boiled the potatoes for 4 minutes and cooked for twenty min stirring every few minutes. Nice, sweet, and on point.
These are good but way too sweet
I boiled the sweet potatoes longer as suggested by another review. This was my first time making sweet potato anything and I like it. Easy and tasty. I used my own measurements for the sugar and butter because I only cooked 2 potatoes. Would cook again. I liked the texture and fried mine a little longer for a crispier finish.

These are good enough for a 5 star rating even though i did use only 1 cup of brown sugar, 1/4 cup of butter for 9 rather small organic sweet potatoes. So i did not change the ingredients just the measurements. Oh i did throw in a handful of pecans toward the end of cooking.
