Fried Scrapple and Egg Sandwich

Ingredients

  1. Four 1/4-inch-thick slabs scrapple
  2. 1 cup instant flour, such as Wondra
  3. Salt and freshly cracked black pepper
  4. 3 tablespoons butter, plus more for frying
  5. 4 slices American cheese
  6. 4 hen eggs
  7. 8 slices soft white bread
  8. Freshly squeezed OJ, for serving

Instructions

  1. Dredge the scrapple in the instant flour and sprinkle lightly with salt and pepper. Heat the butter in a saute pan or skillet over medium heat and gently brown the scrapple on each side, about 3 minutes. Remove the scrapple from the pan and place on a paper-towel-lined tray. Top with the American cheese and allow to slowly melt on top for about 2 minutes. Discard the butter and wipe the pan. Fry the eggs sunny side up in fresh butter and sprinkle with salt and pepper. Arrange the eggs over the slices of scrapple and cheese. Layer the scrapple, egg and cheese between 2 pieces of soft white bread, making 4 sandwiches total. Enjoy paired with freshly squeezed OJ. That’s not how you cook/eat scrapple. Slice the scrapple in to 1/3 – 1/2 inch slices. Otherwise, it’s going to cook like a cracker. Put the slices down in a pan with 1/4″ oil on med-high heat. Cook each side 3-5 mins until bottom is brown, then flip and repeat. Eat it plain on white bread. Or with over-easy eggs and rye toast. Some people also like their scrapple sandwich with mustard. I like to use vinegar. Just shake a little on!
