Ingredients

  1. 4 tablespoons vegetable oil
  2. 5 cloves garlic, finely chopped
  3. 2 green chilies, diced
  4. 2 cups cubed skinless, boneless chicken breast meat
  5. 2 cups cooked jasmine rice, chilled
  6. 1 tablespoon white sugar
  7. 1 tablespoon fish sauce
  8. 1 tablespoon soy sauce
  9. 2 teaspoons chopped green onion
  10. 2 tablespoons chopped fresh basil leaves
  11. 5 tablespoons chopped fresh cilantro

Instructions

  1. Heat oil in a wok or large skillet, over medium-high heat. Fry garlic until golden then add chile pepper and chicken meat, and stir-fry until cooked through.
  2. When chicken is cooked, add rice, sugar, fish sauce, and soy sauce. Cook over medium heat, stirring gently. When mixture is well blended, stir in green onions, basil, and cilantro. Cook for 1 more minute, then serve hot.

Absolutely fabulous!! I am a recipe cook and don’t mess with the original until I’ve made it once. Only thing I added was a splash of fresh lime juice at the end as one reviewer suggested. I will definitely make this again…with no further additions except the lime juice. My son had seconds…and he’s a steak and fries guy

This was super yummy! I cheated a bit and used what I had on hand. I had already purchased some pre made rice mix with lemongrass and chopped ham and such, ready for stir frying. I also had already thawed out pork loin chops. So, off I went using this recipe. I cannot use fish sauce as my husband is allergic to it. So I used extra soy sauce and I had some chili sauce on hand and used that. I did not have fresh basil, bit it was ok.

This has been my go-to recipe during the pandemic. I can switch out whatever meat and veg are available week to week. The fish sauce adds a fatty, savory flavor that makes the dish satisfying, but I’ve substituted chunks of cheddar cheese in a pinch and it worked well. I’ve taken out the garlic and onions (I have an allium sensitivity) and it’s still flavorful and delicious.

So easy and so good. Since I only had one chicken breast which was ~one cup chopped, I added two beaten eggs for extra protein. Per another review I substituted one tablespoon of oil for a tablespoon of sesame oil. Next time I’ll increase that ratio and maybe add peas and sesame seeds on top. Yeah, I’m making it again. Can’t wait to taste the leftovers because it made a LOT for one person.

This was so great and the whole family loved it. I added sesame oil but I wished I added more sesame oil. I added coconut aminos too. I cooked a pre seasoned Hormel Pork Loin seasoned in Lemon and parsley. I first baked it for 45 minutes and it was so juicy and good. Then cut it up in small pieces. I added way more rice than it called for. I actually just cooked the rice earlier in the day and it was dry enough to work. I also added 3 scrambled eggs too. I was adding more of everything and almost doubled the recipe. I didn’t have as much basil as I wanted and added lots of green onions and cilantro at the end. Big hit!

This recipe is great. I’ve made it a couple times. My kids only complaint was that I didn’t make more! Not sure what the green chili is referring to. I tried poblano and serrano. Will try something spicier next time.

Wonderfully different, tasty! Very important that you measure and prepare all ingredients before starting. Once begun, the cooking moves very quickly. I had to throw away the garlic and start again because I couldn’t move fast enough adding the ingredients.

This was really good. Doubled the recipe. 6 tbsp avocado oil, 3 chicken breasts, 4 cups uncooked rice. I had the oil too hot at first and burned the garlic. Took it out and thru in some dehydrated garlic which I wish I’d done from the start. Yummy dish!!

Made this tonight to go with smoked Chinese BBQ pork tenderloin. Used brown rice, oyster sauce instead of fish sauce, added broccoli,carrots, and an egg. It turned out great! Will definitely use this as a base for many fried rice bowl dinners!

This is the best fried rice recipe I have tried. My family loved it. I doubled the recipe to have leftovers and used 1 lb of chicken breasts cubed and 1 lb of fresh shrimp. Otherwise I followed the given instructions. It has a very fresh Thai taste- similar to the taste of our local Thai restaurant fried rice. I think the basil and cilantro are essential. I was skeptical about the jalapeños but they add a very nice flavor without being overpowering. I garnished with fresh cilantro and peanuts on top. This is a keeper !! Thanks for this recipe!

Lovely recipe for fried rice. However, I tripled the amount for the sauce and used mince chicken to give the dish a more even texture. Also added broccoli and will add scrambled eggs next time. Tipped it with Siracha sauce, too.

I followed what one person suggested with using one part sesame oil, also peanuts on top and a squeeze of lime. I made it quite spicy, also added some thai sweet chili sauce. Was very confused about adding sugar, but it worked! Used brown rice because that is all I had – loved it.

My first successful fried rice! So delicious and quick. I swapped the veg oil, green chilis and chicken for coconut oil, red chili peppers and eggs (2 eggs added to the middle of the skillet and cooked through just before adding the basil and cilantro and mixing it all together for the last minute on heat). This will be a regular!
