Fried Pickles with Chipotle Ranch

Fried pickles are the perfect snack to me—they’re crispy, salty and tangy. I like to dip these in my homemade chipotle ranch dressing. They’re so good!

Ingredients

  1. 1/2 cup whole buttermilk
  2. 1/2 cup mayonnaise
  3. Half a 1-ounce packet ranch salad dressing mix
  4. 1 tablespoon lemon juice
  5. 1 teaspoon chipotle chile powder
  6. Vegetable or canola oil, for frying
  7. One 16-ounce jar dill pickle chips
  8. 1 cup all-purpose flour
  9. 2 tablespoons Miss Brown’s House Seasoning, recipe follows
  10. 1 tablespoon garlic powder
  11. 1 tablespoon onion powder
  12. 1 tablespoon paprika
  13. 1 tablespoon kosher salt
  14. 1 tablespoon freshly ground pepper

Instructions

  1. Make the chipotle ranch: Whisk together the buttermilk, mayonnaise, dressing mix, lemon juice and chipotle chile powder until smooth. Cover and refrigerate until ready to serve.
  2. Make the pickles: Pour the oil to a depth of 1 1/2 inches in a Dutch oven. Heat to 375 degrees F.
  3. Drain the pickles and arrange in a single layer on a paper towel-lined baking sheet. Pat dry.
  4. Stir together the flour, House Seasoning and 1 cup water. Dip the pickles in the batter and let the excess drip off. Fry the pickles, in batches, until browned and crispy, 1 to 2 minutes. Drain on paper towels. Serve the pickles with the chipotle ranch.
  5. Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

Had a jar of dill pickles in the fridge not getting eaten. Wasn’t sure how I’d like these, so I halved everything. Still made plenty.
Delish!! Will be making these again. Hubby just about ate them all.

These are excellent. You can make them as spicy as you want. Please stop the annoying, canned electronic music on your women’s shows. Unnecessary.
