Ingredients
- 2 cups all-purpose flour, sifted
- 5 tablespoons nice cocoa powder
- 1/2 teaspoon salt
- 8 tablespoons melted butter plus more to fry with
- 2 teaspoons vanilla
- 2 eggs beaten
- 1 cup brown sugar
- 4 teaspoons baking powder
- 1 cup finely ground roasted pecans
Instructions
- Combine all dry ingredients, and then the wet ingredients. Add the wet ingredients to the dry a little at a time until it is all incorporated and looks like a smooth batter. Heat butter in a saute pan over medium heat and add the batter. Cook the pancakes for 3 to 5 minutes. Remove them from the pan and sprinkle with confectioners’ sugar and serve.
