Fried Chocolate Cakes with Roasted Pecans

Ingredients

  1. 2 cups all-purpose flour, sifted
  2. 5 tablespoons nice cocoa powder
  3. 1/2 teaspoon salt
  4. 8 tablespoons melted butter plus more to fry with
  5. 2 teaspoons vanilla
  6. 2 eggs beaten
  7. 1 cup brown sugar
  8. 4 teaspoons baking powder
  9. 1 cup finely ground roasted pecans

Instructions

  1. Combine all dry ingredients, and then the wet ingredients. Add the wet ingredients to the dry a little at a time until it is all incorporated and looks like a smooth batter. Heat butter in a saute pan over medium heat and add the batter. Cook the pancakes for 3 to 5 minutes. Remove them from the pan and sprinkle with confectioners’ sugar and serve.
