Fresh Strawberry Balsamic Basil Daiquiri

We like that Ted Allen’s daiquiri is not overly sweet, but if you are a fan of a sweet daiquiri, you can add a drizzle of simple syrup.

Ingredients

  1. 1/4 cup ice cubes
  2. 1/2 cup sliced fresh strawberries
  3. 4 tablespoons light rum
  4. 1/2 teaspoon balsamic vinegar
  5. 2 large fresh basil leaves plus 1 small sprig for garnish

Instructions

  1. Place the ice cubes, strawberries, light rum, balsamic vinegar and basil leaves in the pitcher of a blender and blend until smooth and slushy. Pour into a tall glass and garnish with a small basil sprig.
  2. Cook’s Note: If your strawberries aren’t very sweet, add up to 1/2 teaspoon superfine sugar.

I didn’t add simple syrup because i don’t like things very sweet but I can see how some people might want this sweeter. I just made this for my husband and I and we loved the interesting flavor but when I make it for a party, I’ll have a bottle of simple syrup on the side so people can add their own.

I liked the idea of this because you didn’t need to take the time to make a simple syrup. Well, it needed the simple syrup — it was not sweet enough. The rum overwhelmed every other ingredient (and I used good rum. It made about 3/4 cup of the beverage and it says to serve in a tall glass. That tall glass would have to be 1 inch in diameter to fill any kind of a tall glass!
