A beautiful salad that will be served with a homemade dressing. Everyone enjoys this!

Ingredients

  1. ½ cup white sugar
  2. ½ cup white vinegar
  3. 1 cup vegetable oil
  4. 2 tablespoons Worcestershire sauce
  5. ⅓ cup ketchup
  6. 1 small onion, chopped
  7. 5 slices bacon
  8. 3 eggs
  9. 1 pound fresh spinach – rinsed, dried and torn into bite size pieces
  10. 1 (4 ounce) can sliced water chestnuts, drained

Instructions

  1. In a blender or food processor, combine sugar, vinegar, oil, Worcestershire sauce, ketchup and onion, and process until smooth. Set aside.
  2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  3. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  4. In a large bowl, toss together the spinach, water chestnuts, bacon and eggs. Serve with the dressing.

I made some changes…adjusted recipe from 7 to 4; then, substituted some left over Karo light syrup for the sugar, and Thrive algae oil for the vegetable oil(btw…algae oil is fairly expensive but bought it on close out just to try +70% less cholesterol than olive oil ), used broiled turkey bacon instead of real hog bacon; didn’t have any water chestnuts but used 2 tbls. chopped pecans and 2 tbls. hemp hearts that I found laying around and needed to use up, and about a tbls. of left over sunflower seeds. I also added 2 to 3 ounces of processed sliced turkey(rolled, then cut into strips with paring knife). Topped off the salad after plating with croutons. Vinegar & boiled eggs, and 1/2 small sweet onion remained the same except for 4 instead of 7. As you see, I had several things left over from making a pecan pie for Christmas and used them to get rid of them. No photo, camera battery dead. 🙁

Sorry I did not like this at all. I found it too vinegary and sweet all at the same time… If that makes sense. I ended up throwing a whole bunch more oil, Worcester garlic and Dijon mustard into it to try to save the ingredients.

We love this salad. The great thing is you can sub different oils and vinegars. I saute the onoion a bit in the bacon grease just to soften them. I only add a pinch of sugar if any because i dont like sweet..

We used turkey bacon Added goat cheese, cucumber. Tomatoe, and baked shrimp! Yummy!! Everyone loved it! And the dressing was amazing!

I have made this a few times now. I half the amount of sugar as the ketchup also has quite a lot of sugar. Sometimes I add fresh mushrooms for additional texture. It’s a keeper!

Excellent recipe, and I didn’t even have any bacon! The dressing is very good! I used hard boiled egg, feta, craisins, sliced almonds. Even my husband who doesn’t like spinach salads ate it all. Can’t wait to try it with the bacon 🙂

I thought this was just okay. I thought the dressing was very sweet and overpowering. The recipe made WAY more dressing than needed. You could definitely cut the dressing in half and cut the sugar at least in half. I might try it again doing that and I’ll be sure to just drizzle a bit of dressing on my salad. I think after reading all the rave reviews about the dressing, I was overzealous in applying it.

MMMM! So good! My family loved it and asked for it again. I used a 6oz bag of spinach and the amount of dressing was more than enough for several salads. I put the extra in a jar to keep for the next time we make it. Also, shortcut: I used Oscar Meyer bacon pieces!
