Ingredients

  1. 1 (28 ounce) can Roma tomatoes, drained
  2. 4 small Roma tomatoes, quartered
  3. 1 cup chopped white onion
  4. 1 clove garlic, smashed
  5. 1 small bunch fresh cilantro, stems removed
  6. 1 serrano pepper, seeded and chopped
  7. 1 medium jalapeno pepper, seeded and chopped
  8. 1 tablespoon freshly squeezed lime juice
  9. 1 ½ teaspoons kosher salt
  10. ¼ teaspoon ground cumin

Instructions

  1. Combine canned and fresh Roma tomatoes, onion, and garlic in a food processor; pulse 5 times to chop. Add cilantro, serrano and jalapeño peppers, lime juice, kosher salt, and cumin; process for 10 seconds. Pulse further to desired consistency.
  2. Leave seeds in jalapeño for a spicier kick.

Delicious! I roasted the tomatoes, jalapenos, serranos and the garlic. Aslo added a habanero and some chilli de arbol. I don’t usually use can tomatoes but this salsa turned out great. Thank you very much for this recipe.

This was wild success at the Frack house. Everyone loves this. It does make a ton but it will definitely be gone. We can’t tell if it’s more like Chili’s or El Torito. Either way BIG WIN. I kept the seeds in both peppers for a bit more zing (it wasn’t super hot) and added one more clove of garlic.

Ok. Better when I first made it than after it had been in fridge overnight. Don’t understand that. I put a few too many onions and maybe a little too much cilantro in the recipe. Was very good after first making it, but very disappointing after night in fridge.
