These homemade ginger cookies are very delicious! They resemble a cross between gingersnaps and molasses cookies.

Ingredients

  1. 2 ¼ cups all-purpose flour
  2. 1 teaspoon baking soda
  3. ½ teaspoon salt
  4. 1 ¼ cups white sugar, divided, or more to taste
  5. ¾ cup unsalted butter, softened
  6. 2 tablespoons grated fresh ginger
  7. ¼ cup molasses
  8. 1 large egg

Instructions

  1. Combine flour, baking soda, and salt in a large bowl.
  2. Beat 1 cup sugar, butter, and ginger in a large bowl with an electric mixer until light and fluffy. Beat in molasses and egg. Gently fold in flour mixture until just combined. Chill for 1 hour.
  3. Preheat the oven to 350 degrees F (175 degrees C).
  4. Roll chilled dough into 1 1/2 inch balls. Roll balls in remaining sugar, then place 2 inches apart onto ungreased baking sheets.
  5. Bake in the preheated oven until mostly (but not fully) set in the centers and edges are starting to brown, about 15 minutes. Let stand for 1 minute on the baking sheets, then remove to wire racks and let cool completely.

Wow! These might be the best cookies I’ve ever made. So good and fresh, chewy inside with a slight crunch along the edges. I topped with a bit of sugar when they came our. Juat perfect! Flavorful and the house smells amazing, plus the recipe was very easy!

I rarely give a recipe 5 stars but I would give these AMAZING cookies 10 stars if I could! I cut the fresh ginger to 1 Tbl. as I thought 2 Tbl. would be too strong for my taste. I needed less than 1/4 c. sugar to roll the dough balls in. Don’t flatten the dough balls on the cookie sheet. I baked them about 10 minutes. This made 43 cookies with my cookie scoop. I’ve made these 3 times and I’m sure I’ll be making them again!

Made the dough, put the mix in fridge and forgot about it for a week. Baked the cookies and the family loved them. I don’t think the family will let me forget the dough for a week this time.

Not sure what I did wrong.. Cookies spread completely flat, merging into one giant cookie, with no cracks.. The only suspect thing I did was to soften the butter in the microwave. Dough was pretty sticky and wet in the middle of the bowl even after an hour in the fridge. I’ll try again without microwaving the butter.

Very good texture and flavor. I don’t see how you can get 30 of these if you make 1 1/2” dough balls. I got 12 (!) and a small bit left. Cookies were 4+ inches across when baked! I’ll make them again, but in a more sensible size.

These were delicious! I did make a few changes though. I added 1/4 tsp of cinnamon and grated nutmeg and I had to substitute the molasses for maple syrup/ honey.
