French Toast Crostini with Honey Creme Fraiche

Ingredients

  1. 4 eggs
  2. 1/2 cup heavy cream or whole milk
  3. 2 teaspoons pure vanilla extract
  4. 1 teaspoon kosher salt
  5. 1 teaspoon ground cinnamon
  6. 4 to 5 tablespoons butter
  7. 1 French baguette, sliced 1/4-inch thick on the bias
  8. Honey Creme Fraiche, recipe follows
  9. 1/2 cup lavender honey, for garnish
  10. 1 cup toasted sliced almonds, garnish
  11. 2 cups creme fraiche
  12. 1/2 cup freshly whipped heavy cream
  13. 1/2 cup lavender honey
  14. 1 pinch kosher salt

Instructions

  1. In a medium bowl, whisk together the eggs, cream, vanilla, salt and cinnamon until well blended.
  2. In a large skillet, melt the butter over medium heat. Remember, butter burns very quickly. Dip each side of the bread in the egg mixture and gently shake off excess egg batter. Do not over soak the bread, or it will be soggy. When the butter begins to foam, add the egg-soaked bread to the pan. Cook over medium-high heat. Peek under the edges of the bread with a spatula and flip when the toast is golden brown. Repeat. Keep warm between 2 plates on the stove top or in a 150 to 200 degree F oven.
  3. Garnish the top of each slice of French toast with 1 to 2 tablespoons of Honey Creme Fraiche, drizzle with lavender honey and sprinkle with 1/2 teaspoon of toasted almonds. Repeat the process with the remaining slices of bread.
  4. In a medium bowl combine all of the ingredients and whisk well.

I made this for Father’s day- It was a big hit with the whole family. The kids didn’t like the creme Fraiche much, so I put it on the side, so they could choose. It was easy and very tasty! We loved it!

I really looked forward to trying this recipe, and was disappointed in how salty it was. I made two batches because the first one was way too salty. The second time I used less than a pinch of salt and it was much better. Overall, I liked it, and the honey creme fraiche was a nice touch.

This recipe was very tasty and easy to make. The honey creme fraiche was fantastic. I could not find lavender honey so I used tupelo honey instead.

I made this today (even the creme fraiche was made from scratch). My family all really liked it. The only thing I would change was the amount of salt. I would put 1/2 tsp. salt instead of the 1 tsp. listed. The honey creme fraiche really makes this dish! We will be making this again for sure.
