French Onion Shepherd’s Pie

This cottage cheese bowl is perfect on days when you don’t feel like yogurt. It’s wonderful and healthful! Experiment with various fruits and toppings. I enjoy using a grain-free paleo granola.

Ingredients

  1. 5 medium potatoes, peeled and cubed
  2. 1 cup shredded Cheddar cheese, divided
  3. ⅛ cup milk
  4. 1 green onion, chopped
  5. 1 tablespoon salted butter
  6. 1 pound ground beef
  7. 2 tablespoons all-purpose flour
  8. ¼ teaspoon ground black pepper, or more to taste
  9. 1 (10.5 ounce) can condensed French onion soup
  10. ¼ cup water
  11. 1 cup frozen peas

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain.
  3. Mash potatoes and add 1/2 cup Cheddar cheese, milk, green onion, and butter. Stir until mixed well.
  4. Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet with flour and pepper until browned and crumbly, 5 to 7 minutes. Stir in French onion soup and water.
  5. Warm frozen peas in a small, microwave-safe bowl in the microwave for 1 minute. Stir peas into the beef and soup mixture.
  6. Pour the meat and soup mixture into the bottom of a glass casserole dish. Spread potatoes over the top using a rubber spatula. Top with remaining Cheddar cheese and sprinkle with more pepper.
  7. Bake in the preheated oven until hot and bubbly, about 20 minutes.

Great recipe! Now- I only had dry French onion soup. Do at least 1 cup water or a little more. Throw in peas, carrots, and whatever for your veggies. I bet it will be better in the next few days.

Added carrots,corn,onion. Came out tasty

Pretty good. Made it with canned corn instead of peas due to most of the family not liking peas. Turned out a little too runny personally, I would cut the water out, and maybe even drain the ground beef a bit first before adding the soup
