In a flash, creamy macaroni casserole!

Prep Time: 20 mins
Cook Time: 30 mins
Total Time: 50 mins
Servings: 4
Yield: 16 meatballs

Ingredients

  1. 1 pound ground chicken
  2. ½ cup bread crumbs
  3. 1 egg
  4. 1 (1 ounce) package dry French onion soup mix
  5. 1 teaspoon minced garlic
  6. 2 tablespoons butter
  7. 2 medium onions, thinly sliced
  8. 1 tablespoon white sugar
  9. 1 tablespoon olive oil
  10. ⅓ cup red wine
  11. ½ teaspoon salt
  12. ¼ teaspoon ground black pepper
  13. 1 ½ cups beef broth
  14. ½ teaspoon dried thyme
  15. 1 tablespoon all-purpose flour
  16. 6 ounces Gruyere cheese, shredded

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Mix ground chicken, bread crumbs, egg, onion soup mix, and garlic together in a medium bowl until the ingredients are well incorporated. Roll into sixteen 1 1/2-inch meatballs.
  3. Melt butter in a saucepan over medium heat. Add onions and sugar; saute until onions are softened, about 12 minutes.
  4. Meanwhile, heat olive oil in an oven-safe skillet over medium-high heat. Add meatballs and cook, flipping occasionally, until edges are browned, about 4 minutes.
  5. Transfer skillet to the preheated oven and bake until meatballs are no longer pink in the center, about 15 minutes. Check the meatballs halfway through and flip if they are browning too much on the bottom.
  6. Add red wine, salt, and pepper to the onions and stir. Cook over medium heat for 3 minutes. Stir in beef broth and thyme. Bring to a boil. Reduce heat to low and slowly stir in flour. Cook until slightly thickened, 2 to 3 minutes more.
  7. Remove meatballs from the oven and pour onion sauce on top. Cover evenly with Gruyere cheese and return to the oven until melted, about 5 minutes.

I have made this several times – It is one of the most requested meals when I’m having people over. I put it over homestyle noodles. Simple and easy to make and oh so tasty!!!

This was quick easy and delicious. We are conscience of salt in our family so we didn’t add the additional salt and it didn’t need it. The flavor of the sauce stood up on it’s own. Very good recipe. Will definitely make again.

These were so delicious. Store was out of ground chicken so I used ground turkey breast instead. Yummy!

WOW!!!! We liked this a lot. I got lots of, “this is good”. I doubled the recipe and instead of pan frying the meatballs I baked them with the potatoes I served on the side. Really good. I didn’t have gruyere so I subbed mozzarella. Thanks for a yummy recipe.

Made it exactly as written. It was delicious. Would like to add mushrooms to the onion sauce next time.

The only change I made was to use ground turkey instead. Absolutely delicious!

I actually made it with ground pork as they didn’t have ground chicken at the store. I also used red wine vinegar in place of the red wine. Very tasty. I will make this again.

I used ground chicken and turkey. When I added the flour, I mixed it with wine in a small bowl first, then added it to the onion mixture. Not much I would change about it. It was amazing

We really enjoyed the recipe. I did make a mistake and add the onion to the meatballs because I was blabbing on the phone, But that worked out all right. Other than that I did the recipe as they said. I added more of the breadcrumbs and I substituted stuffing mix because I didn’t have any breadcrumbs. I did more of the flour because I desired the sauce to be thicker. It’s very unusual I give it a thumbs up!
