Focaccia Lobster Rolls

Ingredients

  1. 1/4 cup fresh tarragon leaves
  2. 1/4 cup roughly chopped fresh chives
  3. 1 lemon, zested
  4. 1/4 cup lemon juice
  5. 1 clove garlic, minced
  6. 1 teaspoon salt
  7. 1/2 teaspoon freshly ground black pepper
  8. 1/2 cup extra-virgin olive oil
  9. 1/2 cup mascarpone cheese
  10. 1/4 cup cream
  11. 1 pound cooked lobster tails (or prawns), cut into large cubes
  12. 4 pieces focaccia bread (about 4 by 5 inches each)

Instructions

  1. Place the tarragon, chives, lemon zest, lemon juice, garlic, salt, and pepper in a blender and blend until the herbs are minced and the ingredients are combined. With the machine running, add the olive oil. Add the mascarpone cheese and cream and blend until mixed.
  2. Transfer the lobster to a medium bowl. Add the herb sauce and stir to coat. Divide the lobster mixture among the sandwiches and serve immediately.

Personally, I didn’t think there was too much sauce.  I think it complimented the lobster well.  I am not a mayo fan, so I loved the use of mascarpone and EVOO in place of mayo.  LOVE tarragon with seafood, and I thought all these flavors were quite lovely.

used 1/4 the amount of dressing. Wanted to taste the lobster- otherwise the amount of dressing would be too much. Couldn’t find foccacia brad- used ciabatta – split it and toasted it- recipe- excellant

We have made this recipe several times for family and friends and find it absolutely delicious! You do not need to use all of the dressing with your lobster if you want a more subtle flavor. The dressing, alone, is great on it’s own and is wonderful with pita chips!

Way too much dressing for the lobster. The tarragon was too overpowering. Just toss your lobster with some chopped celery and a light coating of mayo. That’s all it needs.

These lobster rolls had lots of really great flavor. I wish, though that the lobster shined more in this recipe; while the sauce was really great, it sort of overpowered the delicate flavor of the lobster. Might try with shrimp next time as another viewer suggested.
