Fluffy Chocolate Buttercream Frosting

My friend Linda recommended a chocolate frosting that was light and fluffy. Cover any cake with it, smoothing down any air bubbles.

Ingredients

  1. 4 cups powdered sugar
  2. 1 ½ cups unsalted butter, softened
  3. ¾ cup unsweetened cocoa powder
  4. 2 teaspoons vanilla extract
  5. 1 pinch salt
  6. 4 tablespoons heavy whipping cream

Instructions

  1. Combine powdered sugar and butter in a stand mixer fitted with the paddle attachment. Beat on medium speed until light and fluffy, about 5 minutes. Add cocoa powder, vanilla, and salt; mix for 30 seconds. Add cream 1 tablespoon at a time, mixing after each addition. Scrape down the sides of the bowl. Mix on medium speed until frosting is shiny and seems to have large bubbles, 3 to 5 minutes more.

good, but I added a little bit of milk to make it thinner

This is great, just be sure the butter is softened but still cool-not melted. I use vanilla bean paste instead of extract, but this makes a great frosting!
