Fingerling Potato Chips

Ingredients

  1. 1 pound medium fingerling potatoes
  2. 1 tablespoon paprika
  3. 1 tablespoon salt
  4. 2 tablespoons coarse black pepper
  5. 2 tablespoons freshly chopped cilantro leaves
  6. 2 cloves garlic, minced
  7. Vegetable oil, for frying

Instructions

  1. Preheat oil to 350 degrees F.
  2. Thinly slice the potatoes and place in a bowl.
  3. In a large bowl, combine the paprika, salt, pepper, cilantro, and garlic, and set aside.
  4. Add the potatoes to the hot oil. Fry in batches until golden brown and crispy, about 2 to 4 minutes.
  5. Remove the chips from the oil, drain on paper towels and toss in the bowl with the seasoning.
