Ingredients

  1. 1 pound dry fettuccini noodles
  2. 8 slices bacon
  3. 4 eggs
  4. ½ cup grated Parmesan cheese
  5. 1 ¼ cups heavy cream
  6. 1 pinch ground black pepper to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
  2. Fry bacon in skillet over medium heat until crispy, remove and drain on paper towel. Chop with knife into bits.
  3. Beat the eggs, cheese and cream in a bowl, then add the bacon. Pour over the pasta in the pan and toss gently using tongs.
  4. Return the pan to a very low heat and cook for 1 to 2 minutes, or until slightly thickened. Don’t overheat or the eggs will scramble. Season well with black pepper and serve.

I added garlic with the bacon. I think I should have not had it on the heat because the noodles were hot enough to melt the sauce. I added half cup of pasta water at the end. It helped to make the pasta silkier. I added peas as you can see and put in chilli flakes.

I loved the recipe! I was craving a good carbonara but lost the recipe I had long ago. Found this one, and with the addition of red onion and frozen peas (sauteed in the bacon grease, btw) combined with the perfect proportion of the wet ingredients as laid out in the recipe, the taste took me back to my first carbonara in a restaurant in Dayton, Oh! I will definitely make this dish again…it’s the new hit in my house!

After reading other reviews, I used 3 eggs, and cut the bacon before frying. I substituted milk for the cream and turkey bacon for regular bacon. Definitely needed the salt and pepper. Enjoyed and will make again.

This recipe is great, very quick and easy. I used a whole can of coconut milk instead of heavy cream. Doubled the parmesan cheese, and added garlic salt as well as salt and pepper. Made for a very creamy and delicious carbonara!
