Ingredients
- Cooking spray
- One 8-ounce block Greek feta
- 2 cups quartered yellow and red cherry tomatoes
- 1/2 cup olive oil
- 1/4 cup pitted kalamata olives
- 2 tablespoons finely chopped parsley
- 1 tablespoon finely chopped oregano
- 2 cloves garlic, minced or grated
- Zest of 1 lemon
- Kosher salt and freshly ground black pepper
Instructions
- Preheat a shallow waffle iron to its highest setting. Spray the iron on the top and bottom with cooking spray. Place the block of feta in the center of the waffle iron, then press until the feta melts and the waffle iron closes. Allow to cook until golden brown and crisp, 3 to 5 minutes. Mix together the tomatoes, olive oil, olives, parsley, oregano, garlic and lemon zest and pour into a food processor. Briefly pulse until the mixture looks coarse. Taste and season to your liking. Remember, feta is salty; do not over season with salt. Remove the feta waffle from the waffle iron and cut into 8 wedges. Place on a platter and serve with the tomato mixture.

Recipe sounded great, but it did not work. I followed the recipe as written. I used a solid block of feta, but it turned to a wet mush which I could not get it off my waffle iron despite spraying it very well with cooking spray. The waffle iron was old and I threw it out. The sauce tasted good on the feta, but tasted a bit odd on its own.
Worked beautifully with President’s Feta, which was a drier block, but next time, we tried with an organic feta from Costco packed in liquid and it was a disaster and similar to what I’m reading in the reviews below. Did not form a waffle, but the crumbley bits were still tasty. We will definitely try again with the President’s…
So I only did the waffle with a Greek style fried chicken,ignored the tomato sauce and did a rosemary infused maple syrup instead. It was really good. Using this in place of a regular waffle in chicken and waffles is great.
Sooo, totally didn’t work! Followed the directions exactly – I wish I could post pictures so you could see what an epic failure it was. The cheese just turned to liquid, although I had 3 or 4 nice little crunchy pieces. I’m hoping I can clean (and save) my waffle iron. The tomato mixture was yummy tho!
I know this sounds awesome, but don’t waste your time. Please don’t create such a mess for yourself to clean up. I ended up throwing away my beloved waring over this nonsense.
Disaster! Beligian waffle maker, Bulgarian feta, ended up a crumbly mess. Took 30 min to clean the waffle iron despite heavy spray pre-use. Taste of the crumbly bits was ok. I suspect it’s the Bulgarian feta which is creamier and softer? So note to everyone, do NOT use Bulgarian feta.
everything was delish….but my feta turned to water….are there different types of feta that I should try?
The idea of feta waffles is awesome but mine burnt and stuck to the waffle maker.
