A tasty but speedy and simple breakfast is made by scrambling eggs with feta, zucchini, and onions. The feta eliminates the need for salt in these eggs, but if your feta isn’t as salty, you may need to add salt to taste.

Ingredients
- ½ (12 fluid ounce) can fat-free evaporated milk
- 1 teaspoon pure vanilla extract
- 1 tablespoon granular sucrolose sweetener (such as Splenda®), or more to taste
Instructions
- Pour evaporated milk into a small saucepan; add vanilla extract. Stir in sweetener. Bring to a boil, stirring constantly, to allow alcohol in extract to cook off, 1 to 2 minutes. Remove from the burner and let cool before using, or place in an airtight container and refrigerate.
- Imitation vanilla extract can be used instead of pure.
- White sugar, Truvia(R), or powdered sugar can also be used but the amount will depend on taste.
