Level: Easy
Total: 2 hr 10 min
Active: 45 min
Yield: 4 to 6 servings

Ingredients

  1. 1 1/2 cups ketchup
  2. 1 cup canned whole cranberry sauce
  3. 1/2 jalapeno or serrano, optional
  4. 2 tablespoons olive oil
  5. 1 yellow onion, finely diced
  6. 2 stalks celery, finely diced
  7. 3 cloves garlic, minced
  8. 2 pounds ground turkey
  9. 1 1/2 cups stuffing mix
  10. 2 large eggs, lightly beaten
  11. Kosher salt and freshly ground black pepper
  12. 1 sweet potato, cut into 8 wedges, then halved again lengthwise into spears

Instructions

  1. Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
  2. Combine the ketchup, cranberry sauce and jalapeno in a small saucepan over medium heat. Bring to a simmer and let cook, stirring occasionally, 2 to 3 minutes. Remove from the heat, then discard the chile and set aside.
  3. Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the onion and celery and cook until both soften and start to become translucent, 3 to 4 minutes. Add the garlic and cook for another minute. Remove from the heat and allow to cool slightly.
  4. Combine the turkey, stuffing mix, eggs, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Add the onion mixture and 1 cup of the ketchup sauce and stir gently until just combined, making sure not to overmix.
  5. Transfer the mixture to the prepared baking sheet and shape it into a loaf. Pour the remaining ketchup sauce over the loaf and spread so that the entire loaf is covered with sauce. Bake for 30 minutes.
  6. Meanwhile, toss the sweet potatoes in a bowl with remaining tablespoon oil. Sprinkle with salt and pepper. Remove the meatloaf from the oven and scatter the wedges on the baking sheet around the meatloaf. Return to the oven and cook for another 45 minutes. Remove from the oven and let rest for 5 minutes, then slice and transfer to a serving platter. Surround with the baked sweet potatoes.

Can you freeze the leftovers?

I’ve made this meatloaf about a dozen times! I use the entire box of stuffing and add another egg. Also I use the whole can of cranberry sauce and more ketchup. I slice up the jalapeño and leave it in the “extra” sauce for those who like a little on the side. Especially on my delicious cold sandwiches the rest of the week!

Good! But would save some sauce for on the side next time!

This is a fall staple for our family now!!

Delicious! Made it without the cranberry sauce and jalapeños.

So yummy. An entire Thanksgiving meal in one bite. Like that gum in Willy Wonka and the Chocolate Factory. Need to serve it with blueberry pie!

This is a Fall favorite!

I’ll have to make this for dinner for one of my weeks. The turkey meatloaf looks delish! Thank you for sharing this recipe.
I’ve made this recipe, and I’m going to make tomorrow. When make this, I also make a meatloaf with ground beef for my roommate.

I’ve been making this recipe for the past year and every time I still say ‘yum’ after I take my first bite. I leave out the peppers and use a little more cranberry. Turkey meatloaf, mashed potatoes, glazed carrots, yum.
John Cunningham
We love this but next time I make it, I will use more cranberries and less ketchup in the sauce.
