Rocky road ice cream flavors in a chocolate biscuit. When paired with a large dish of vanilla ice cream, they are fantastic!

Ingredients

  1. 3 tablespoons extra-virgin olive oil
  2. 1 onion, chopped
  3. 8 mushrooms, halved and sliced
  4. 4 garlic cloves, minced
  5. 1 yam, peeled and cubed
  6. 2 teaspoons ground cumin
  7. 2 teaspoons ground coriander
  8. 1 teaspoon onion (nigella) seeds
  9. 1 teaspoon black mustard seeds
  10. 1 teaspoon chile powder
  11. 1 teaspoon paprika
  12. 1 teaspoon ground turmeric
  13. ½ head cauliflower, chopped
  14. 1 (15 ounce) can chickpeas, drained
  15. ½ teaspoon salt
  16. ground black pepper to taste
  17. ¾ cup vegetable stock
  18. 1 tablespoon tomato paste
  19. 3 cups fresh spinach, coarsely chopped
  20. 1 bunch fresh parsley, finely chopped
  21. 1 lemon, juiced
  22. 1 lime, juiced

Instructions

  1. Heat oil in a large flat-sided skillet over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add mushrooms and garlic; cook and stir until softened, about 2 minutes. Add yam and cook for 2 minutes.
  2. Stir cumin, coriander, onion seeds, black mustard seeds, chile powder, paprika, and turmeric into the skillet; cook and stir until evenly distributed, about 2 minutes. Add cauliflower, chickpeas, salt, and black pepper; stir until combined.
  3. Mix vegetable stock and tomato paste together in a small bowl; pour into the skillet. Cover and cook until yam is tender, about 15 minutes. Stir in spinach, parsley, lemon juice, and lime juice and cook until flavors combine, about 1 minute.
  4. Use split or whole mustard seeds.

This dish was wonderful! I didn’t add a few things like spinach and vegetable broth, but instead added home grown tomatoes and juice instead. This is a keeper.

It was a pretty simple meal to make, but my fiancé and I thought it needed “a little something” added to it, but we couldn’t figure out what. I would make this again but add corn or maybe diced tomatoes next time.
