This is a widely used condiment in Tunisia. It is a home-made pepper paste that may be used in a variety of dishes and is popular in Tunisian cooking. I use it to spice up anything I desire, and my family uses it frequently.

Ingredients

  1. ¼ cup extra-virgin olive oil
  2. ½ lime, zested and juiced
  3. 2 cloves garlic, minced, or more to taste
  4. ½ teaspoon ground cumin
  5. ¼ teaspoon red pepper flakes, or more to taste
  6. ¼ teaspoon ground chipotle pepper
  7. 1 ½ pounds beef sirloin, cut into 1-inch cubes
  8. 1 red bell pepper, cut into 1-inch cubes
  9. 1 green bell pepper, cut into 1-inch cubes
  10. ½ onion, cut into 1-inch cubes

Instructions

  1. Whisk olive oil, lime juice, lime zest, garlic, cumin, red pepper flakes, and chipotle pepper together in a large glass or ceramic bowl. Add sirloin and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator, 30 minutes to 2 hours.
  2. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  3. Remove sirloin from marinade and discard marinade. Thread sirloin, red bell pepper, green bell pepper, and onion onto skewers.
  4. Cook on the preheated grill until sirloin is browned and vegetables are tender, about 4 minutes per side.

Everyone loved them. Definitely tasted like fajitas. Marinated for 2.5 hours, cooked on grill, turned over once. Served on white rice, it made for 7 skewers (12inch).

I typically thread my meat separate from the veggies due to cooking time but it actually worked out nicely in this recipe. Food just seems more fun on a stick and I will make this again!
