Everything Bagel Breakfast Bake

Ingredients

  1. Nonstick cooking spray, for the baking dish
  2. 5 everything bagels, cut into 1-inch hunks (stale bagels work great here!)
  3. 8 ounces whipped cream cheese
  4. 3 cups whole milk
  5. 10 large eggs, lightly beaten
  6. 1/2 teaspoon garlic powder
  7. 1/2 teaspoon kosher salt
  8. 1/4 teaspoon freshly cracked black pepper
  9. 1/2 red onion, finely diced
  10. 1/4 cup chopped fresh chives
  11. 8 ounces sliced smoked salmon
  12. 2 tablespoons capers

Instructions

  1. Spray a 9-by-13-inch baking dish with nonstick cooking spray. Spread the bagel chunks in the dish in an even layer, then dollop the cream cheese around the baking dish, on top of and in between the bagel chunks.
  2. In a large bowl, whisk together the milk, eggs, garlic powder, salt, pepper, half the red onion and half the chives until combined. Pour the mixture over the bagels in the baking dish. Cover the baking dish with foil and refrigerate overnight.
  3. Preheat the oven to 350 degrees F. Set the baking dish out at room temperature while the oven heats.
  4. Bake, still covered in foil, until mostly set, about 1 hour. Remove the foil and bake until the top is lightly browned, 10 to 15 minutes more. Let cool slightly for 10 to 15 minutes. Garnish the top with ribbons of smoked salmon, capers and the remaining red onion and chives. Serve immediately.

This looked so good on the show, but it wasn’t. I, too, agree that it was very bland. Needed more salt and flavor, which is weird given all the spices on the bagels. I didn’t mind the texture, as I grew up with bread pudding. Would not recommend.

After reading the reviews for this, I made this recipe with leftover brioche and lots of everything bagel seasoning (probably 1 teaspoon per slice of brioche) instead of bagels.o added the cream cheese as per the recipe. My family is divided when it comes to liking smoked salmon, so after baking I topped with finely shredded cheddar and ham on one half and smoked salmon with dill red onion and capers on the other half. Everyone was happy.

I made this to serve a number of guests at a birthday brunch on Sunday. I even put the red onions, chopped dill, and capers in separate bowls so the guests could add them to their taste. Personally, I thought it was good, but not great. When I was cleaning up after my guests had left,  I noticed a lot of them left some of this behind on their finished plates, so I guess it didnt appeal to them, either.  Not a bad recipe, but apparently not “clean your plate” good.  Sorry, just my observation!

I made this yesterday for Father’s Day.  I thought it was okay but my family did not like it much.  My husband did not like the texture of the bagels.  I think to like this, you have to like bread pudding, which he is not a fan of.  I thought the texture was fine, better with bagels than with other breads which can get really soggy in something like this.  We don’t like lox-style salmon, so I put hot smoked wild salmon on it, and that was nice.  It is a bit bland, so I would definitely recommend the extra onion, chives, and capers on the side.

OMG amazingly delish!!  Added some fresh dill from our garden.  Easy to make.  Great brunch for Father’s Day.  Coincidentally my SIL saw the same cooking show and also made it for Father’s Day.
