Ingredients
- 2 large carrots
- 2 large zucchini
- 1 tablespoon extra-virgin olive oil
- One 32-ounce jar marinara sauce
- One 20-ounce package beef or cheese ravioli, fresh or frozen (thawed if frozen)
- 8 ounces grated mozzarella (2 cups)
- 1/4 cup fresh basil leaves, chopped or torn
- 1/4 cup grated Parmesan
Instructions
- Preheat the oven to 350 degrees F.
- Grate the carrots and zucchini using a food processor or a hand grater. Heat the oil in a large, oven-safe skillet or braiser with a lid over medium-high heat. Add the grated vegetables and cook, stirring frequently, until the vegetables have released their water and are soft and starting to brown, about 10 minutes. Add the marinara and ravioli and bring to a simmer. Turn off the heat and sprinkle the mozzarella over the top. Cover and bake until the ravioli is cooked and the cheese is melty, about 20 minutes.
- Remove the cover. Change the oven to broil and broil until the cheese is golden and bubbly, about 5 minutes. Sprinkle with the basil and Parmesan. Serve warm.

Such an easy work week dinner. Loaded with vegetables… Who would’ve thought Carrots could taste so delicious in a marinara sauce! It’s amazing and the whole family loved it.
Made this for my husband and I last week with cheese ravioli. He typically isn’t interested in sauce without protein, but loved this !?! We ate it for a meal then each had it left over to finish it off. We will definitely make it again as it was easy to put together and tasted great!
I made this last night for my husband. He is not a fan of zucchini but I told him to not judge until he tasted it. I did add mushrooms and I didn’t have enough mozzarella cheese, so I added some provolone I had in the fridge. He loved it!!!! Ate it twice last night! Keep bringing recipes like this to the show!!!!! It was not only delicious but allows you to put your own spin on it and still be successful!

If using frozen ravioli, do you need to boil it first? Or does it cook in the sauce?
I agree with everyone who made this dish and loved it. I don’t have small children but I recommended this recipe to my daughter who has teenagers in sports. Easy to make, delicious and so rich with the zucchini and carrots and the mozzarella cheese. This is a keeper!
great recipe and so easy to make. Used my favorite jarred marinara sauce. Once the veggies are grated the recipe takes 5 minutes to complete. My family loved it
Yes, and found it easy and delicious! However, I added Italian seasoning and chili peppers to add a little zest.
