Ingredients
- 13 tablespoons butter, softened
- 1 cup white sugar
- 3 eggs
- 1 ¾ cups all-purpose flour
- 1 ½ teaspoons baking powder
Instructions
- Preheat an oven to 350 degrees F (175 degrees C). Grease 2 8-inch cake pans.
- Place the butter and sugar into a mixing bowl, and mash together with a wooden spoon until the mixture is creamy and thoroughly combined. In a separate bowl, beat the eggs, and pour into the butter mixture. Stir until combined.
- Sift the flour and baking powder together in a bowl, and lightly stir into the butter mixture. Pour half the batter into each prepared cake pan.
- Bake in the preheated oven until a toothpick inserted into the middle of a cake comes out clean, 20 to 25 minutes. Cool in pans for 10 minutes before removing to finish cooling on wire racks.

Well, its a cake. Its just very heavy and dense, more like a pound cake than a light fluffy cake for a party. Kinda bland, but the addition of your favorite extract could improve the flavor. Won’t be making it again.
Very easy and quick recipe for cake in a pinch. I added about a tsp of vanilla just for flavor. It was a bit heavy though, and when I made 2 8in cakes they were quite thin. Next time I will put the entire batter into a single pan, or double the recipe.
smaller version of the old fashioned pound cake. to lighten it separate eggs and whip egg whites. fold into the rest just before putting in pan. it’s a classic, but i still prefer more modern versions.
