You almost won’t realize how healthy this soup is because it is so filling and soothing. The spicy sausage, kale, potatoes, and copious amounts of chicken broth make it ideal for cold weather.

Ingredients

  1. 32 ounces chicken broth
  2. 2 (15 ounce) cans black beans, rinsed and drained
  3. 1 (14 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  4. 1 (14 ounce) can petite diced tomatoes
  5. 2 (6 ounce) cans chunk white chicken, drained
  6. 1 tablespoon minced garlic
  7. ½ teaspoon red pepper flakes
  8. salt and ground black pepper to taste

Instructions

  1. Stir chicken broth, black beans, diced tomatoes with green chile peppers, petite diced tomatoes, chicken, garlic, red pepper flakes, salt, and black pepper together in a large pot; bring to a simmer and cook until hot and flavors combine, about 20 minutes.

I added a lot more garlic and red pepper flakes, a potato cut up really small and some kale. I also just boiled and shredded some frozen chick beasts I had. I think it made all the difference. Really easy!

This soup is “souper” easy and quick to get on the table. It seemed lacking in flavor though. After I cooked it for 20 minutes and did a taste test, I ended up adding onion flakes, onion powder, and just a little sweetener to balance the acidity.
