Easy Slow Cooker White Chicken Chili

Quite quick and simple, a tried-and-true recipe. Simply put, my family and friends adore it. To serve, top with shredded Cheddar cheese, sliced onions, and corn chips.

Ingredients

  1. 3 (15.5 ounce) cans great Northern beans, undrained
  2. 2 (15.5 ounce) cans pinto beans, undrained
  3. 2 (15.25 ounce) cans corn, undrained
  4. 3 onions, diced
  5. 2 (14 ounce) cans chicken broth
  6. 1 rotisserie chicken, boned and cubed
  7. 2 (4 ounce) cans diced green chile peppers, undrained
  8. 1 tablespoon hot pepper sauce
  9. 2 teaspoons dried oregano
  10. 2 teaspoons ground cumin
  11. 1 teaspoon garlic powder
  12. salt and ground black pepper to taste

Instructions

  1. Combine great Northern beans, pinto beans, corn, onions, chicken broth, rotisserie chicken, green chile peppers, hot pepper sauce, oregano, cumin, garlic powder, salt, and pepper in a slow cooker.
  2. Cook on Low until flavors combine, about 8 hours.
  3. You can also simmer this on the stove for 1 hour, or longer if you like it thicker.

Very good but I have no idea why you would add pre-cooked chicken. My suggestion – use bone-in skinless thighs. Delivers much more flavor. Also, I always add much more cumin and fresh chopped cilantro during the last 30 minutes.

This reading is for the description of this recipe only.A question I have with this recipe would be seeing that the chicken is already pre-cooked I can’t understand using a crockpot for eight hours when it would be more efficient using the stovetop .

This recipe was awesome. I used all the ingredients in the recipe but cooked it on the stove top. It was done in no time with the rotisserie chicken and canned beans. I would recommend this recipe to anyone looking for a great white chicken chili. 5 STARS

This was absolutely delicious- everyone in my family agreed! The ONLY change I made was to rinse the beans (rinsing beans is much easier on the digestive tract) and added some corn starch to make it a bit thicker (took out some of the hot broth in a ramekin and added cornstarch and then re-added it to the crock pot). This will be at the top of our chili list!

Read reviews and did the following..used rotisserie chicken, ranch beans instead of white, left off the can of green chilies and used rotel tomatoes with chili instead. Delicious. Loved the use of taco seasoning instead of chili powder, less harsh. All ready in fifteen minutes. True, it no longer qualified as white chili, but it sure tasted good!

This is right up my ally! Super easy to assemble and then forget, plus having a hearty smell cooking all day. Family loved it!! We didnt have tortilla chips so I put out saltines, lol. They all assumed it was meant to be that way. It really is a 5 star meal in my house. TY

This has great flavor. Simple to put together- threw everything in the crockpot in the morning and dinner’s ready when I got home. The recipe makes a large amount so next time I’ll cut it in half. Is a good amount for a larger family.

This was very good and quite easy to make. I reversed the ratio of northern beans and pinto beans to use what I had on hand , but otherwise followed the recipe. I did cut the recipe in half, as it makes quite a bit as written. This is going in my recipe box as a repeat contender! Thanks for sharing your recipe!
