Ingredients
- 4 (6 ounce) chicken breasts
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 (15 ounce) can black beans, drained
- 1 (8 ounce) jar salsa
- 1 (1.25 ounce) package taco seasoning
Instructions
- Place chicken, corn, beans, salsa, and taco seasoning into a slow cooker.
- Cook on Low until chicken is tender and flavors have combined, about 8 hours.
- Shred chicken meat using 2 forks.

It is easy to make but don’t expect a traditional fajita look and taste. It will do in a pinch.
Awesome EASY recipe. Also very forgiving!! I didn’t have black beans, so I used a can of bean medley. I used a jar of “cowboy caviar” salsa and 3 large chicken breasts. This was fantastic over rice, topped with sour cream, salsa, cilantro, shredded cheddar and sauteed onions and peppers. Will definitely make again!
Solid recipe that we will probably make again. Hope to use the leftovers on nachos! May need more salt.

I added diced jalapenos and lime juice before cooking. This isn’t really fajitas by itself, but if you add peppers and onions after cooking it makes a really good fajita
My husband who is usually not fond of this type of dish, loved it. Of course I did use the mildest type of salsa I had on hand. I do agree with that this is an easy dish with using pantry items.

I will most likely make it again. This is a good recipe when you’re on a tight budget and trying to shelf cook. Its filling and you can reuse leftovers on nachos. I am giving it 3 stars because it’s just okay it feels as though it’s lacking something.

Super easy to make but… I wouldn’t call these fajitas. I did use homemade taco seasoning because I didn’t have packet taco seasoning (but had fajita seasoning) and it works in a pinch. I also used a full 16 oz jar of salsa. I served with corn tortillas, and regular taco toppings. My taco loving family loved them.
