An affordable and simple substitute for takeout. This is a terrific technique to sneakily get our toddler to eat his vegetables because he loves ramen noodles! Using the appropriate ramen soup taste, you could also create this using chicken, beef, or pork. For a more authentic flavor, I am sure many people would also add sesame oil, however (my preference) I think sesame oil is overbearing.

Ingredients
- 1 pound cooked shrimp
- 1 (16 ounce) package frozen mixed vegetables
- ¼ cup water
- 1 (3 ounce) package shrimp-flavored instant ramen noodles
- 3 tablespoons low-sodium soy sauce
- 1 teaspoon garlic powder
- ½ teaspoon ground ginger
Instructions
- Combine shrimp, mixed vegetables, and water in a skillet over medium-high heat; cook and stir until vegetables are cooked through and shrimp are hot, about 5 minutes.
- Bring a small pot of water to a boil. Cook ramen noodles in the boiling water until soft, 2 to 3 minutes; drain. Add noodles to vegetable mixture. Stir seasoning from ramen noodles, soy sauce, garlic powder, and ground ginger into the vegetable and noodle mixture; toss to combine. Cook and stir until hot, about 1 minute.

This was simple and a good way to jazz up instant ramen noodles. I wouldn’t call this Lo Mein but rather jazzed up instant ramen. This one is hard for me to rate because I did make some changes but changes I felt were necessary for the end dish not being mush. For starters, you need at least 2 packets of noodles for an even ratio of noodle/veggies/shrimp but only use 1 of the season packets. Frozen veggies are pretty watered down as it is so instead of steaming in water as the recipe calls for, I sauted them in a little olive oil to help crisp them up. Cooked shrimp would never need 5 minutes of cook time so I used raw shrimp instead and that was a good choice. Overall fast and simple meal but one that needs some tweaks.
Authentic lo mein this is not, but I appreciate the simplicity of this “cheater” version. It makes for a very quick weeknight meal. One pack of ramen for 4 people makes it very light on the noodles, so I’d recommended in the very least 2 packages (but only using 1 of the seasoning packets). I did change up the cooking method a bit because I didn’t want everything turning to mush. First I made sure to cook the noodles in the beginning, and had them ready to go. Instead of “steaming” the veggies and shrimp in water, I quickly stir-fried the veggies in 1 tbsp oil over high heat for 2-3 minutes until hot; I didn’t use the water called for. I then tossed in the shrimp and cooked for another minute to warm them through. The shrimp definitely doesn’t need 5 minutes, as it is already cooked. I stirred in the soy sauce and seasonings, along with the noodles and dinner was done. I felt like the veggies and shrimp had no flavor, while the noodles soaked up all the flavor. Maybe adding the seasonings to the veggies and shrimp in the beginning would help.
Add the shrimp at the end it the get rubbery.
Teriyaki instead of soy sauce
This is absolutely delicious and easy to make! I made it for “Chinese dinner” one night on vacation for my sister-in-law, brother-in-law, my husband and myself, and it was a big hit! It’s on the “regular” rotation” and is wonderful on Meatless Monday!

Sorry, I really wanted to like this one, I love lo mein, I love ramen noodles, but this one didn’t taste like lo mein, and the noodles would have been good for one person, not the 4 listed as servings. I was embarrassed serving this to just my hubby, so glad I didn’t try it for company!
I made this dish exactly as stated except I used Teriyaki Sauce instead of soy sauce. I thought it was good, easy to make, and not to expensive depending on the amount and type of shrimp used. I will definitely make it again. I will say though it will only feed 2-3 people. I used a bag of frozen stir-fry vegetables which made it more authentic.
I used chopped veggies I had instead of mixed veggies. Also, added some water and cornstarch to the mix for a bit of sauce.
will make this again, easy and taste great! I added fresh mushrooms and cherry tomatoes to beef it up a bit.

I think this is a great quick way to use extra ingredients. Sure it tastes like amped up Ramen, but it has Ramen noodle packets as an ingredient what are you expecting.
Quick and easy! I used minced garlic instead of garlic powder, and broccoli was the only vegetable. My 15 year old loved it. Nice to do something different with ramen noodles. ??

I loved it! I made it with 4 packs of noddles and only added 2 packs of the seasoning. It was still tasty and feed all 4 of us and more. I sure will make this again!
