Easy Rum Balls

In order to satisfy my husband’s hunger for marinated grilled chicken, I decided to create my own marinade using fresh herbs from my garden as I was out of our usual recipe. It turned out to be extremely juicy and flavorful, like summer. When paired with grilled corn on the cob, excellent!

Ingredients

  1. 4 (1 ounce) squares unsweetened chocolate, chopped
  2. 1 (8 ounce) package cream cheese, softened
  3. 5 cups powdered sugar
  4. ¼ cup rum
  5. 1 cup chopped nuts

Instructions

  1. Place chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove and set aside to cool.
  2. Meanwhile, beat cream cheese in a bowl with an electric mixer until creamy. Gradually beat in powdered sugar and rum; mix until well combined. Beat in melted chocolate.
  3. Roll mixture into small balls and roll in chopped nuts. Refrigerate until firm.
  4. If you want the rum balls to contain more rum, you will need to add a lot more powdered sugar.

Although tasty these rum balls are not worth the time and effort to make. They are very sticky and I had to refrigerate them overnight in order to be able to half-way roll them into balls. Once rolled, I again had to refrigerate them because they would not hold their shape. After another hour they were cold enough to roll but the nuts would not stick. I re-rolled them and with the warmth of my hands they softened enough to roll in the nuts. But then again they would not hold their shape. Again I refrigerated them and once cold I pushed them into balls. But within 5 minute they were again soft and gooey. With so many other recipes out there, this ‘Easy’ Rum Balls recipe is definitely not easy.
