Ingredients
- cooking spray
- 1 cup white sugar
- ½ cup light corn syrup
- 1 ½ cups peanuts, or more to taste
- 1 tablespoon butter
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
Instructions
- Grease a baking sheet and a wooden spoon with cooking spray.
- Mix sugar and corn syrup together in a microwaveable bowl safe for high temperatures.
- Heat sugar mixture in the microwave on high for 5 minutes.
- Stir peanuts and butter into sugar mixture. Heat in the microwave until mixture turns a caramel color, 3 to 4 minutes. Mix baking soda and vanilla into syrup until smooth and foam has dissipated.
- Spread candy onto the prepared baking sheet using the sprayed wooden spoon. Work quickly; candy hardens fast. Let stand until cool. Break into pieces to serve.

I love it! I had looked at other brittle recipes and was discouraged that they were complicated. This one is much simpler and it’s delicious!
Easy. Except it is cooled for over an hour and i put waxed paper between layers. It’s stickin g to the wax paper.
The problems with this recipe and all other microwave types is NO ONE adds the wattage of the microwave oven.This is like submitting a recipe for stove top and not noting if cooking on low,medium, or high.No wonder some results are burned and some are gummy.
I used pecans and it turned out perfect.
It didn’t get hard to chewy can I put in back in the micro to cook longer or pitch it

This was my first attempt at making brittle. I found this recipe to be very good & easy. I will definitely make this again. I followed the recipe as written as I always do when trying something for the first time. My microwave is 1200 watts & I had none of the problems some others have mentioned. However, when I make it again, I will be using several of the tips other reviewers stated such as; using my large 8 cup glass Pyrex measuring bowl that has a handle as I found it to be very hard to pour the mixture out with no handle to hold. Using parchment paper instead of the spray. And also, I liked the idea of using a butter knife instead of a spoon to mix & spread the candy out.
I love this recipe it’s my go to for peanut brittle. It is super easy. Only thing I changed was I used raw peanuts.
I grew up making peanut brittle over the holidays, dutifully stirring my spoon while my candy thermometer fogged up, wouldn’t stay put and had an attachment that lined up to block the temperature I waited to reach. I tried making this recipe last night. I followed the directions carefully, but my brittle never hardened. It had the flexibility of chewing gum. I’m sure it has something to do with my microwave. I was afraid of scorching it or burning it. I used honey roasted peanuts, so it was hard to gauge when the correct color had been reached. I ended up throwing away my mess and had to resort to using the old fashioned stovetop version. They haven’t improved on candy thermometers after all these years, and I got burned a couple of times from peanut syrup popping.
I have made this recipe several times and it is fool proof. People ask me at Christmas time to make them peanut brittle every year. STEP 2-I mix the sugar and corn syrup with a knife, much easier clean up. Again in STEP 4. Remind strongly that brittle hardens quickly .Delicious, highly recommended.
I’m not a baker at all and this recipe was very easy. It was helpful to have the ingredients already measured out and ready to use. Clean up with hot and soapy water. It was so easy, I ended up making two batches and gave some away to my neighbors.
Did not set up hard as brittle should be. Followed directions exact but ended up a sticky mess.

My husband loves peanut brittle. I tried to make it once. It was yuk. But I saw this recipe and tried it. It looked great and tasted better then the store bought brittle. I’ll make this again, I’m sure.
I think the taste is good but the amount of peanuts to add is way off. If you want the taste of the brittle then I would only add about 3/4 cup peanuts. Otherwise its just the peanuts you taste.

I made a few batches to give to friends for a Christmas treat. They absolutely loved it! I loved it because it was so darned easy!
I’ve made this for Xmas twice now….. & it’s really good, BUT you need a pyrex or Corel glass pan with a long handle on it & good oven mitts. Taking it out of the mIcrowave each time and pouring it onto the pan has to be done FAST – without burning yourself because it’s hot as heck! Also….have ALL your ingredients measured & ready in ramekins before you start….and parchement paper on the pan works great. Once you start, you have to move FAST. Be sure to ‘grease’ your spoon(s) & spatula It’s also good with chopped pecans or hazelnuts! I make it 2 ways & use it for Xmas gifts along with cookies.
