- 3 large eggs, at room temperature
- 2 tablespoons olive oil
- 1 teaspoon salt
- 2 tablespoons water, or as needed
Instructions

- Mix flour, eggs, olive oil, and salt in a bowl until combined. Add water, 1 teaspoon at a time, to flour mixture until a smooth, thick dough forms.

- Turn dough out onto a lightly floured work surface and knead for 10 minutes. Let dough rest for 5 to 10 minutes.

- Divide dough into 8 balls; use a pasta machine to roll and cut dough into desired pasta shape.

- This dough makes really great homemade linguine or ravioli using a manual pasta machine. If it’s too sticky, just roll a bit in flour.
- This recipe makes enough pasta for 24 small raviolis or 4 servings of linguine. Whatever pasta you make, it should take no more than 4 to 6 minutes to boil.

This recipe came together so easily and it tasted delicious. I made spaghetti with it and cooked it fresh/without drying or freezing. I did not have to use water in the dough but it was a great consistency. Used my Kitchenaid pasta roller and boiled for five minutes. My young kids had a great time helping, and are also to thank for the uneven bits! Lol

I too was (shamefully) out of olive oil, veggy worked fine. Needed all the water but no more. This was our first time as the machine was opened Christmas morning 2022. I had strong doubts about the dough but the press removed all concerns. These are delicious noodles! We are going to experiment with supplementing various flours including gluten-free.
Noodles turned out curiously, to say the least. We didn’t have a pasta machine, which likely caused the problem. So we turned them into churros instead and baked them at 400 degrees for 7 minutes. Delicious!
It’s very hard to find recipes for things like pasta that render a small amount, and this is perfect for one meal for two people. I paired it with the Alfredo Sauce recipe by Rebecca Swift here on AR and it was sooooo delicious and incredibly filling. I have a Kitchenaid with all three pasta rollers/cutters and it was a breeze to run them though..I even use the roller to knead the dough for me util it comes out smooth. A keeper because this is very easy to make in just a few minutes and doesn’t produce five pound of pasta to be forgotten about later.
This was easy and tasty. Just remember to keep the dough moist that you’re not using. I used a damp paper towel to keep scraps damp until I could preroll them into pasta. It was perfect for big raviolis, but a little dry for fettuccine. Would add more egg for fettuccine or noodles.

I love this recipe. The more I make it the better it turns out. Once in awhile when intake it I like to add some garlic juice.
This is an excellent, quick-to-make dough – I do use 00 flour, but all other ingredients the same. I mix the ingredients with my kitchen aid mixer then switch to the dough hook to knead. I let it rest for 20-30 minutes before rolling and cutting. I’ve used this to make fettuccini and tortellini, and plan to make spaghetti tonight.
The dough itself was fine but as another reviewer commented it tasted eggy.
