Ingredients
- 3 large ripe tomatoes, chopped
- 2 medium cucumbers, peeled and chopped
- 1 small red onion, chopped
- ¼ cup olive oil
- 4 teaspoons lemon juice
- 1 ½ teaspoons dried oregano
- salt and pepper to taste
- 1 cup crumbled feta cheese
- 6 black Greek olives, pitted and sliced
Instructions
- Toss tomatoes, cucumbers, and red onion together in a shallow salad bowl. Drizzle oil and lemon juice over top, then sprinkle with oregano, salt, and pepper. Top with feta and olives.
- You can use two green onions instead of the small red onion if desired.

I made this salad with apple cider vinegar instead of lemon juice. I whipped the oil, vinegar salt, pepper and oregano until creamy and poured it over the salad. Very good recipe!

This is absolutely delicious! I’ve made this a ton of times. The dressing is perfect, I also use it for a Greek-pasta dish (using a box of rotini pasta, 1.5 times this recipe, add shrimp).

I will definitely make this again. Nice and light. I did use cherry tomatoes because that was all I had, but I think that helped make it less soupy. I also used the small, snack-size cucumbers. Again, that makes it less soupy and the cukes are nice and crispy. I’d add more Greek olives, but I’m a big olive fan.
Lovely salad! Definitely substitute kalamata for the black olives but otherwise so delicious with falafel and pita tonight!

Made it as is but omitted the olives since we aren’t fans of olives. We all loved it! My children even raves about it. It is light and refreshing; perfect for potluck picnics! Fast and easy to make too 🙂

Delicious! Easy and VERY tasty recipe! I didn’t mix in the onions cuz my oldest doesn’t like them but left them on the side for the rest of us to enjoy….AND WE DID! We ALL this salad!
Refreshing. Perfect in pita bread for lunch. I made it exactly as written. EDIT TO ADD: I made it a second time. This time I added a tsp of lime juice, a clove of garlic, and extra salt to make up for not having the salty feta cheese. I served it on salty tortilla chips. Still very good, even without the cheese.
