Ingredients

  1. 1 cup gluten-free all purpose baking flour
  2. 1 teaspoon xanthan gum
  3. ½ teaspoon baking soda
  4. ½ teaspoon salt
  5. ½ cup unsalted butter at room temperature
  6. 6 tablespoons white sugar
  7. 6 tablespoons brown sugar
  8. 1 egg
  9. 1 teaspoon vanilla extract
  10. 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease a baking sheet or line with parchment paper.
  2. Combine gluten-free flour, xanthan gum, baking soda, and salt in a bowl and set aside.
  3. Cream butter, white sugar, and brown sugar together in a bowl. Beat in egg and vanilla extract. Gradually mix in the flour mixture. Stir in chocolate chips. Drop dough by teaspoonfuls onto the prepared baking sheet. Dip spoon in water and lightly flatten each cookie with the back of the spoon.
  4. Bake in the preheated oven until golden brown, 9 to 11 minutes. Remove from oven and let cool on the tray for 2 minutes before transferring to a wire rack to cool completely.

Trying out GF baking. Happy with these. Didn’t have Xanthan gum. Used 1 t cornstarch. They spread quite a bit though. But that made them thin and crispy. Tasted great. I used mini semisweet chocolate chips. They distribute better throughout. Will definitely make again and again.
