Easy Garlic-Dill Aioli

When we were kids, this was one of the few ways my mom could persuade my dad to consume carrots.

Ingredients

  1. 1 ½ cups mayonnaise
  2. 2 cloves garlic, minced
  3. 2 tablespoons olive oil
  4. 2 tablespoons chopped fresh dill
  5. 1 tablespoon lemon juice
  6. 1 teaspoon ground black pepper

Instructions

  1. Combine mayonnaise and garlic in a food processor and blend until smooth. Transfer to a large bowl.
  2. Add olive oil, dill, lemon juice, and pepper; whisk rapidly until thickened, about 5 minutes.
  3. This is a shortcut. For a legit aioli you start with egg yolks and olive oil and whisk it together, but that’s just mayo, so I save time and just use mayo.
