Unbelievably simple but delicious Mexican-style eggs! You can make a brunch fit for a king by adding sausage to it. Add some sour cream or taco sauce on top, if you’d like.

Ingredients

  1. 14 ounces uncooked rotini pasta
  2. 2 cucumbers, chopped
  3. ½ onion, finely chopped
  4. 10 cherry tomatoes, quartered
  5. ¾ cup pitted black olives, sliced
  6. 1 cup Italian-style salad dressing

Instructions

  1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in pasta and return to a boil. Cook uncovered, stirring occasionally, until pasta is al dente, about 8 minutes. Drain and cool by running cold water over pasta in a colander set in the sink.
  2. Combine pasta with cucumbers, onion, tomatoes, and olives in a large bowl. Pour Italian dressing over salad; stir to combine. Cover and refrigerate for at least 2 hours before serving.

I used vegetable rotini and I also added some shredded chicken and some French fried jalapeños and substituted French fried onions instead of using diced onions to give it a nice crunch, will definitely make again!

I’ll make this again for sure! Great recipe. I used balsamic vinegar and extra virgin olive oil in place of the Italian dressing, and I added chicken which I cooked with the onion and some garlic powder to taste. It turned out really well.

I didn’t use the whole 1/2 yellow onion so I cut that back just a little bit. I added more of the tomato’s and olives. Can’t have enough of those! I added Banana Pepper’s and (1) stem of celery as well. It was delish!! I will be making it again next week!

I love this recipe and have made it several times now. I’m vegan, so I just follow the recipe as it is and use a homemade Italian dressing. I love to make it in advance and take it to work throughout the week, because it’s one of those recipes that gets better throughout the week. Will definitely make this over and over again.
